Goat Cheese, Soft

Keto Savory Pancakes

Olive Oil
2 tablespoon
Maple Flavored Syrup by Lakanto
1-½ teaspoon
Balsamic Vinegar
1 teaspoon
Basil, Fresh
1 tablespoon
Red Onion
¼ large
Black Pepper

Step 1
Heat a tablespoon of olive oil in a skillet over a medium heat. Finely slice the onion and add to the pan along with the balsamic and lakanto syrup. Stir well to combine. Cook for a minute or two until just softened then reduce the heat to low. Continue to cook for a further 5-6 minutes or until the onions are sweet, tender and slightly caramelized.Step 2
Divide the onions between the four pancakes.Step 3
Tear the prosciutto into bite sized chunks and arrange on the pancakes.Step 4
Crumble the goats cheese over the top.Step 5
Season with black pepper and scatter with fresh chopped basil to serve.
