Recipe Steps

21 min

  • Step 1

Preheat an oven to 350 degrees. Prepare a ¼ sheet tray with parchment paper. Arrange 8 individual tablespoons of shredded cheddar cheese. Spread the cheese thin. A thin chip is a crispy chip, a thicker one will be chewy.
    Step 1
  • Step 2

Bake the tray of cheese in the oven for about 60 seconds. It should not take more than this for the cheese to melt, but watch the cheese bake to avoid burning.
  • Step 3

Pull the tray out and let the chips cool. If you’d like, you can use a utensil to shape the melted cheese into little triangles before they cool. Otherwise, leave them in a circle.
    Step 3
  • Step 4

Speed up the process of cooling the cheese chips by putting the tray in the refrigerator for 10-15 minutes. Then, once cooled, place the cheese chips in a plastic ziploc bag with the remaining ingredients. Shake the bag until the chips are coated in the seasonings.
    Step 4
  • Step 5

    Enjoy your homemade Keto Doritos!

just made them!!! very yummy!! took about 1min and 40 seconds to completely melt! It did help to put them in the fridge to speed up the cooling process! excellent recipe, thank you!! yes, they are not crisp yet still yummy. didn't add cayenne, used chili powder instead and smoked paprika :)

I used a gouda cheese that I always bake into crackers. I added nutritional yeast and parmesan to the spices for a cheese flavor. It was spicy for me; next time I would use less cayenne and cumin. Overall...fantastic@

Refer to Cool Ranch Dorito instructions to make cheese crispy. Timing is not good on this recipe. 10-15 min in oven is necessary.

I've done this with cheese for decades since my husband and I used to do Stillman's - basically protein. Just don't take the timing for granted. Continue until the fat bubbles out and they look bubbly . I do it with Provolone, Swiss, Cheddar, Muenster. I normally do it in a non-stick skillet or on a plate in the microwave. If it's not a high fat cheese put a thin coat of butter or something -could probably use Pam. I don't even try to time it I just go by texture and appearance.

This doesn’t work at all. I made sure they were very thin, but not crisp at all after cooling following the recipe. Also way too much cayenne. Yuck.

Just made these. They were good. May need to lay off of the Cayenne pepper. My mouth is still on fire. Lol

60 seconds is definitely not long enough. Need at least 10 minutes maybe up to 20 minutes. Otherwise you just get soggy cheese blobs. Also when I used baking paper the cheese stuck to it and wouldn't come off. So used baking tray with a silicone baking mat on it

Greasy, and not crispy at all even when cheese is spread thin.

If you don't use the pre shredded cheese or use the carb free cheese, won't the carb value change?

Most cheddar cheeses add about 1g carb per serving.

Make it easy and use pre sliced cheddar cheese slices cut into 4 triangles. You’ll get crisp uniform chips this way. You can also use your microwave (use parchment) paper for a quick one slice (4 chips) chip fix.

The only reason that I didn’t give them five stars is because I made the chip part following a different recipe using Sargento thin sliced cheese cut into triangles. This worked much better. But the spices are what made the chips. Very good, even my husband likes them.

Did you used thin slices or ultra thin slices? I couldn’t find anything but ultra thin but after cooling they’re not coming off the parchment paper.

I agree. Cheese slices cut into triangles are much easier and provide for a uniform crunch.

This recipe is a good idea, but it could use some improvement. Like many other reviewers, my chips were chewy even though I made sure they were thin. I think they need to be in the oven longer, maybe 5 minutes or so. If you want them to be hard they need to burn just a tiny bit. Also, cooling them in the fridge? Who wants cold chips?

It is just cheese melted with spices added when cooked and re-shaped. Didnt taste good at all. Would rather just eat regular cheese!

When prepared as indicated they turn into cheese with spices. Not crispy.
