Chicken thigh, skin eaten

Diced Pancetta by Waitrose
1-½ ounce
Maple Flavored Syrup by Lakanto
1 tablespoon
Olive Oil
1 tablespoon
Red Onion
½ small
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Preheat the oven to 400 degrees Fahrenheit.Step 2
Heat the olive oil in a skillet over a medium/high heat. Add the chicken thighs skin side down and cook until well browned. Turn and then cook the other side until browned.Step 3
Roughly chop the onion. Season the chicken thighs then turn upside down. Add the onion to the skillet along with the pancetta. And drizzle over the syrup.Step 4
Transfer to the oven to bake for 15 minutes. Turn the thighs over and bake for further 10-12 minutes or until the chicken is completely cooked through, the skin is crisp and golden and the pancetta is caramelized.
