Step 1
Preheat the oven to 400 degrees Fahrenheit.Step 2
To prepare the satay, add the almond butter, sesame oil, maple syrup, tamari sauce and lime juice to a mixing bowl. Finely chop the chilli and add to the bowl. Whisk everything together well to combine so you have a smooth sauce. Set 1.5 tablespoons of the sauce aside and reserve the rest in a serving bowl.Step 3
Add the chicken wings to a mixing bowl. Mince the garlic and finely grate the ginger and add to the bowl with the wings along with the lime zest and olive oil. Rub the seasonings into the wings with your hands so that they are well coated.Step 4
Arrange the wings across a shallow oven tray and bake for 15 minutes so that the skin begins to crisp.Step 5
Take the 1.5 tablespoons of satay and baste the chicken wings all over. Continue to bake for a further 10-15 minutes until golden brown, cooked through and the skin is crisp. Serve with the reserved satay for dipping.

Really tasty, but 3 wings is definitely not a serving! Maybe a small appetizer, but not a meal. Thankfully we had cooked ‘4 servings’ according to the recipe, so had enough for dinner for two people.
