Keto Creamy Dill Cucumber Salad

Classic creamy cucumber and dill salad is the perfect side dish to grace any summery dinner menu. Thinly sliced cucumbers and white onion are tossed into a creamy, tangy sour cream sauce made with apple cider vinegar and sweetener. The salad is ideal eaten immediately after making and also after it has been marinated in the fridge for a couple of hours. It is the perfect side dish to any Keto sandwich, roasted pork chop, or grilled chicken.

What type of cucumber should I use?

You can use English cucumber or conventional cucumbers. If using garden cucumbers, which tend to be juicier, consider removing the seeds.

How long does this salad last in the fridge?

The salad is best eaten on the day of but can be eaten on the second day.

Can I make this dish vegan?

Yes, simply swap the sour cream for dairy-free sour cream.

    Use a vegetable peeler to peel some of the skin off the cucumber, but leave some of the skin intact.

    Slice the cucumber into thin rounds and place in a large mixing bowl with thinly sliced white onion.

    In a small bowl, combine the sour cream, apple cider vinegar, sweetener, and fine sea salt.

    Add the sauce to the cucumbers. Give the mixture a good stir. Be sure to coat all of the ingredients well. The vinegar will help to soften the cucumbers slightly.
