Keto Chicken Croquetas
Croquetas are a delicious Spanish food that are typically part of tapas. This recipe serves as an excellent side or snack! The inside is made with lightly seasoned chicken that is juicy and a little spongy. The outside is crispy and fried. While two pieces may not seem like a lot for a side, the croquetas are actually quite filling!
*Please note that you will need 1 ½ cups of grapeseed oil for frying the croquetas. The amount noted in the ingredient list is for nutritional purposes only.

Raw Egg
1-½ large
Parmesan Cheese
¾ cup, grated
Almond Flour
3 tablespoon
Chicken Breast, Skin Removed Before Eating

Salt
0.5 teaspoon
Black Pepper
0.75 teaspoon
Onion Powder
0.5 teaspoon
Spices Nutmeg Ground

Step 1
In a bowl, whisk the eggs and set aside. Combine the parmesan cheese and almond flour on a wide plate, and set this aside as well.Step 2
In a food processor, combine the cooked chicken, salt, pepper, onion powder, and nutmeg. Pulse until the ingredients are blended as finely as possible. Then, pulse in about 1 TB of the egg you whisked together. The chicken mixture should just come together.Step 3
Use your hands to form 8 croquetas. You want each croqueta to be packed densely and about 2 ½ inches long.Step 4
*Please use 1 ½ cups of grapeseed oil for this recipe. Heat the oil in a medium sized skillet to a high heat. When the oil is ready, dip each croqueta in the egg and then in the almond flour mixture. Place the croquetas in the hot oil and cook them for about 60-90 seconds per side or until golden brown.Step 5
You may transfer the cooked croquetas to a paper towel to soak up the extra oil before serving. Enjoy hot!

Pretty good! I used rotisserie chicken and added some diced onion, oregano and parsley. The onion helped keep the inside moist.

Flavor was pretty good, wish I would have started off with ground chicken to save time. I'm not sure if I did something wrong but these were super dry.

These were more like chicken nuggets...I didn't really like them but if u really want a chicken nugget..this is a good option..
