Is coconut Keto?
For individuals following a Keto diet or aiming to reduce their Carb intake, coconut proves to be an excellent choice. Coconut is naturally low in carbohydrates and rich in healthy fats, making it a staple in Keto-friendly recipes. In the case of Keto lemon coconut balls, shredded unsweetened coconut adds both flavor and texture without significantly impacting your Carb count. By incorporating coconut into this recipe, you can enjoy the tropical taste sensation while staying within your Keto macros, making it a delightful option for sweet Keto snacks.
How to customize this recipe?
The beauty of Keto lemon coconut balls lies in their versatility. While the recipe provides a delicious blend of lemon and coconut flavors, feel free to customize it according to your preferences. For a nuttier taste, consider adding finely chopped almonds or pecans to the dough mixture. To enhance the lemony goodness, increase the amount of lemon juice and zest to suit your taste. Additionally, you can experiment with different sweeteners such as stevia to achieve your desired level of sweetness. With endless possibilities for customization, you can tailor these lemon coconut balls to satisfy your cravings and dietary needs, ensuring a delightful snacking experience every time.
How to store leftovers?
If you find yourself with leftover Keto lemon coconut balls (although it’s hard to resist eating them all at once!), storing them for later enjoyment is simple. Place the balls in an airtight container and store them in the refrigerator for up to one week. For longer storage, you can freeze the balls for up to one month. Whether chilled or frozen, these delightful treats retain their flavor and texture, ready to be enjoyed whenever a sweet craving strikes. This convenient storage option ensures that you always have a delicious and satisfying snack on hand, whether at home or on the go.

I quadrupled this recipe (😈) and it made about 2.5 cups of “dough”. It made 15 little-cookie-scoop balls. So yes I agree with the person that said this recipe yields much less than expected. So I guess when you’re eating only 1 at a time, quadrupling is the way to go!
