  • Step 1

    Preheat an oven to 375 degrees and spray a glass baking dish with pan spray. Prepare a large zucchini (starting weight about 8 oz) by slicing it in half lengthwise. Use a spoon, scoop, or coring tool to scoop out most of the inside of the zucchini and discard it, leaving you with mostly-hollow zucchini halves. Your final zucchini weight should be what is listed in the ingredients.

    Place the 2 zucchini halves in your baking dish. Drizzle the olive oil over each piece, then sprinkle the salt, pepper, and oregano over the zucchini.

    In a bowl, mix together the marinara sauce, chopped pepperoni, and chopped black olives.

    Fill each zucchini half with the pizza mixture. Then, sprinkle the mozzarella cheese over the top of each half.

        One of my first Keto recipes and I loved it! I upped the recipe to 4 full zucchini and still cooked for 25 minutes. Worked well :)

          I wonder if and for how long they would cook in an air fryer. Trying to save energy of my huge oven for 2 halves of zuccini.

          Personally, I like to use a thick slice of ham or piece of low salt gammon as my "pizza" base, and I up the veggies using torn spinach leaves. It is amazing how a great "pizza topping" can really hit the spot !!

                Swapped black for green olives and light cheddar cheese for morzarella also used paasata instead of marinara 👍

                  Works well without mascarpone cheese and less carbs. Careful not to overcook zucchini. Also use plain tomato sauce and season it yourself. Jar sauce is always high in sugar.

                    I use plain canned sauce also because raos seems to always kick me out of ketosis or mess with my ketone levels

                      Does anyone know if a boat consists of the whole zucchini or half of one? Seems a bit high in carbs for half the zucchini.
