Low Carb Instant Pot German Style Pot Roast
Most everyone has had a pot roast, so it is fun to mix up the flavors. Low Carb German-Style Pot Roast is flavored with sauteed, crispy bacon, whole grain mustard, dill, and smoked paprika. White, sweet pearl onions are also added to the pot roast to give extra flavor and texture. The chuck roast is seared in the residual bacon fat and salted heavily. Then the entire roast is placed in an Instant pot with plenty of beef broth to simmer in. The resulting pot roast is deliciously tender with German-style flavors.
What kind of beef to use?
Please use a chuck roast or other type of beef roast that is higher in fat.
What makes this a German-style roast?
This roast is made German-style using bacon, mustard, and spices like dill weed, smoked paprika, and allspice.
Do I have to use an Instant Pot?
If you do not have to use an Instant Pot, you can use a traditional oven set at 300-350 F, then cook the pot roast for 3-5 hours depending on desired doneness and your particular range.

Beef Chuck Blade Roast Separable Lean And Fat Trimmed To 1/4" All Grades Raw Top Steak

Coarse Kosher Salt

Garlic powder
2 tsp
Stone Ground Mustard
0.33 cup
Paprika
2 tbsp
Dill weed, dried
2 tbsp
Allspice, ground

Pearl onions, cooked

Step 1
Cut up the bacon into small pieces. Then add them to a cold large nonstick skillet. Turn the heat to medium and allow the bacon to render the fat until the bacon is crispy about 7-8 minutes.Step 2
Remove the bacon with a slotted spoon to the Instant Pot bowl.Step 3
Salt the roast and season it with garlic powder on both sides. Place it directly into the hot bacon fat and sear it on both sides for several minutes until very evenly browned.Step 4
Do not be afraid to burn the roast; it is hard to burn it, especially with plenty of fat in the pan.Step 5
Place the seared roast into the bottom of an Instant Pot. Add the mustard, dill, smoked paprika, and allspice. Set the Instant pot on high for 3 hours.Step 6
In the meantime, blanch the pearl onions for 30 seconds in boiling water.Step 7
Shock them in an ice bath, and then use a paring knife to trim the onions’ ends and peel the papery outer skins off.Step 8
Release the pressure from the pot once the timer ends and add the pearl onions. Cook them for 3 minutes on high, then release the pressure. Serve the tender beef immediately with a delicious Keto side dish.

The nutrition information on this is off. As for the liquid amount… I use a quart of broth to cook with the meat. After cooking I remove the meat, onions, and as much bacon as possible. Then I add water and turn it into a bomb gravy.

This is NOT TRULY KETO! 1100 calories a serving is not KETO! and 10+ carbs is really high when you have to eat the other 7 hours of the day. We are usually aiming for between 1200 & 1600 calories a day depending on what our needs are or our sex, etc... And our carbs should be below anywhere between 30 and 50 tops a day. So that's pushing it for one main meal.

I redid the recipe in my personal folder and these facts are off. This is a keto meal.

3 hrs is too long in the instapot. Is that oven time? Also, I agree with BHBMike that that's too much liquid unless you're making soup.

If my roast is all the way thawed I cook it for about an hour. If it is partially frozen I cook it for 90 minutes. Still adding the extra 3 minutes when adding the onions. Turns out perfectly cooked everytime.

Recipe instructions don't mention beef broth! Also, 32oz seems abit too much,unless this is a soup.

If you aren’t planning on making a gravy then just a cup of broth and no water works great. If you are planning on a gravy then 32oz of broth (hold the water until after meat is removed and you are making the gravy)

Agree. Also 3 hrs in the pot? No. Maybe in the oven.
