This time, our super-friend, Avocado, brings this delicious recipe together. Despite using only butter lettuce leaves as the chicken salad delivery vessel, this makes a fantastically filling lunch. Ingredients

    ¼ cup, chopped

  • Cilantro, Raw, Coriander Leaves

    2 tablespoon

  • Chicken Breast

    Chicken Breast

    8 oz, boneless, cooked

  • Olive Oil

    Olive Oil

    2 tablespoon

  • Butter Lettuce

    Butter Lettuce

    6 large leaf

Recipe Steps

  • Step 1

    Remove the skin and seed from a large avocado and smash the fruit in a bowl with a fork. Get out as many lumps as possible.

    Mix in the olive oil, salt, pepper, garlic powder, and lime juice. Dice both the red onion and cilantro and add these into the avocado mixture as well.

    Use a fork and knife to shred your cooked chicken breast into fine shreds. Then combine the chicken and the avocado mixture together. Stir in the final amount of olive oil to bring the chicken salad together.

    To prepare the lettuce cups, rinse and dry a head of butter lettuce well. Remove 6 large outer leaves and discard of any brown edges. Use a fork or spoon to fill about a 1/3 c. of filling into each butter lettuce leaf and enjoy!

      Had this for dinner tonight. Was ok as made, a little bland. Added some ground chipotle powder & a little more lime. Texture was a little off for me, so I used Zero Mission tortillas with a little Queso cheese warmed in the microwave. Turned a good filling with the greens & a few added pepitos.

        I love the Zero Mission tortillas (my fav is Sundried tomato basil). I like to put 6 on a paper plate, spray with coconut or butter spray, add 2 tbs of grated Parm, and s/t .25 cup of shredded mozzarella. Makes little crunchy pizzas to break up and eat. My microwave takes 5 min. Some microwaves I’ve used are ready at 4 min. The only carbs in this come from the type mozzarella I use — 2 carbs. Total cals = 210 for the whole plate. Very good. 🙏😎🖖

      I added freshly chopped bacon bits and diced jalapeños to mine (a bit more lime juice too) it was great 👍🏼

        Very delicious 😋. I just cut it all up and popped it in a bowl and drizzled the dressing over the top. Will certainly eat on a regular basis

          Well, you like Avocados for on. Not such a fan but know they are good way to obtain good fats. So I added some mayo and walnuts and celery and a little Splenda to make it my own. Not to bad

                No, 1 serving is 3 lettuce cups. The recipe is 2 servings, 3 lettuce cups per serving (about 1/3 cup in each lettuce cup).

                Hubby and I really enjoyed these! So filling too. Topped with Ring of Fire Habanero hot sauce and it paired great with them. Definitely will be a staple meal especially during the hot summers.

                      Looks like lunch today! As an aside, mustard isn’t sugary at least not the yellow, spicy brown or the dijon I keep on hand.

                            Quick and easy to prepare. I buy a rotisserie chicken and have the dark meat for 1-2 meals and then use up the chicken breast to make this salad. Tastes great too
