Keto Avocado Cucumber Salad

78 ratings

If you're looking for a refreshing summer salad recipe, you've found it! This Keto Avocado Cucumber Salad is perfect for eating outdoors during the warmer months. The crisp crunch of the cucumbers pairs perfectly with the creamy, nutty avocado. Tangy lime juice and salt tie this dish together for a fresh flavor that will keep you coming back for more! This salad will definitely become one of your go-to summer dishes.

Can I prepare this salad in advance?

This salad is best prepared as close to the serving time as possible since the avocados will brown and the cucumbers will lose their crunch as time passes.

Can I customize this salad?

Yes! Try adding some chilled, cooked shrimp for some protein. You can also add red onion or thinly sliced fresh serrano pepper for an extra kick. A drizzle of extra virgin olive oil on top can add more depth of flavor as well!

Quick and easy to make but the cilantro was overpowering. For me, not the right herb for this dish. Will try another next time.
