  • Step 1

    Add the ground almonds, almond butter, coconut oil, cinnamon, erythritol, baking soda and salt to a food processor. Blend to form a thick paste.

    Add the eggs to the food processor as well as the almond milk and lemon juice. Blend until you have a smooth and creamy batter.

    Heat a waffle maker to the highest setting and lightly brush the pan with oil. Once the waffle maker has reached temperature, ladle in half the batter mixture. Use a spatula to create an even, smooth layer.

    Cook the waffles for 4-5 minutes until golden brown all over and hot through. Repeat the process with the other half of the batter.

    Whilst the waffles are cooking, heat the olive oil in a large pan over a medium heat and add the bacon. Cook until piping hot through and crisp.
  • Step 6

    Allow the waffles to cool a little before removing from the waffle maker, then serve warm with 2 rashers of bacon per person and a drizzle of syrup.

    Very good keto waffle. I added a tablespoon of sour cream on top with bacon. Only reason for 4 stars is they don’t get as crispy as I like. But still very good recipe.

          Looks yummy! I don't have a waffle maker. Can I cook this in a cast-iron skillet to make it into a pancake instead? I'll share my thoughts here after trying if that's a yes!

              Question, not trying to sound ignorant but why cook the bacon in olive oil? Bacon is full fat, and with the amount of grease that’s cooked off of it, you’re not getting the benefit from using the oil. If you’re looking for the healthy oils, wouldn’t it make more sense to omit the oil in the bacon and use Irish butter on the waffle?

                Lol My thoughts exactly. Girl do it your way. Bacon releases way too much oil to add more oil is nonsense.

              Delicious. Used Walden farms calorie free pancake syrup. Substituted heavy whipping cream and butter. Next time I’m gonna separate the eggs and whip the whites into stiff peaks. SO GOOD!
