Step 1
Preheat an oven to 375 degrees. Create your pork rind breading by pulsing the pork rind, parmesan, salt, pepper, garlic, onion powder, mustard powder, and paprika in a food processor until you have a fine crumb.Step 2
Prepare all your ingredients: spread the pork rind breading on a plate, whisk an egg in a small bowl, line a sheet tray with parchment paper, and pull out 5 thin-sliced pork loin chops.Step 3
One by one, dip each pork chop in the egg, let any excess drip off, press both sides of the pork chop in the breading, and lay each one down on the parchment paper.Step 4
Bake the tray for 40 minutes. Flip the pork chops over and bake for an additional 12 minutes. This recipe here was garnished with chopped parsley and lemon zest!

Delicious crunchy goodness! I raised the temperature to 400⁰ and shortened the baking time by about 10 minutes. Also added 1/4 tsp. Lakanto sugar-free maple syrup to the egg dip. The tiny hint of sweetness made the pork-rind breading taste even better!

There is twice as much pork rinds than what you need! I had 1 lb of thin sliced pork loin, so I used 8 Oz of pork rinds. I had more than 1/2 of them left.

I used a thicker cut pork chop and cooked them in a Traeger smoker. The results were amazing. This is my new favorite pork recipe.

I brine the chops overnight in water and salt to ensure moistness. The recipe should include the thickness of the chop, as many grocery stores sell super-thin chops. I agree with another member, turn up the heat and lower cooking time.

I want to make this recipe but leave out the Parmesan cheese. Is there a way to delete the cheese from the nutrition scale?

top right-hand corner three dots "copy" the recipe then open the copied recipe, delete the Parm, add whatever else you would like, then save the recipe. I suggest you give it a different name besides copied"

1.3 oz of pork per person/serving with 26 grams of protein. That is way off - 3oz of boneless pork has 23 grams of protein.

This is my 4th time making for the family. We all love it, and I'm the only one doing the Keto diet. Kids and hubby love it. I add a little melted butter (cooled) to the eggs to give it a little better taste. As well as I will mix it up and get spice pork rinds when we want a tinny kick in our pork rind breading... i also cook mine at 450 for about 10-15min a side to prevent the soggy essential some people have said they get.... Hope this helps... Its Yummy 😋

This was delicious... I cooked for 30min and 12 min on the other side since they were thin pork chops. Paired with steamed broccoli and cauliflower with a cheese sauce

Just making sure I’m reading the ingredients correctly. It says the recipe is for 5 servings and the amount of pork I should use is 1/2 pound (8oz.). Is that correct? 8oz. of pork for 5 people?

Your family of 4 eats 18 oz of pork (six 3 oz chops). I agree. This recipe claims 5 people eat 8 oz. Oh my.

They're the extra thin sliced kind. The typical serving for a pork chop is 3oz. A thick cut chop would be closer to 5-6oz. My family of 4 usually eats 6 of the thin cut chops (two for each adult and one for each kid).

My family RAVED about this meal! I will say I mistakenly bought pork rinds flavored with chili, but perhaps that added even more flavor. I paired the pork chops with cauliflower rice and sautéed mushrooms - so good!!
