Step 1
Gather your ingredients before you make the cheese spread. You may wish to leave you cream cheese out o soften at room temperature for 10 minutes beforehand. The ingredients listed are basic ingredients, leaving you room to add on to your desired taste. You can include additional spices or any fresh herbs at your discretion. Blend softened cream cheese in a stand mixer fitted with a paddle attachment. Mix on a high speed, stopping to scrape the bowl down with a spatula, until the cream cheese is smooth and lump-free. Shred the cheddar cheese and blend it into the cream cheese. After the two cheeses blend together, blend in the mayo at a lower speed with the salt and pepper. This is really good for dipping celery sticks into it. I also add pickles.

I usually skip the pimento and add in 3/4 squidge of Sriracha. It adds that garlic and vinegar taste, with a bit of spicy kick to keep things interesting. Will try this one soon bc I've never added cream cheese to pimento cheese before. Just sharp cheddar and Dukes mayo, S&P, and Sriracha. Will update with results soon.

So handy to have in the fridge. I also double the recipe and sometimes add a little cayenne.

Making this without the pimiento. May add some olives; at least for garnish. Why does the picture look like potato salad?

I doubled the recipe, used sharp cheddar cheese and added cayenne pepper. So good. I think I'm gonna try chili powder or curry next time.
