Keto Cauliflower And Bacon Croquettes
These cauliflower croquettes are packed with flavor from tangy Parmesan, salty bacon and aromatic chives.
These are a great snack between meals or would be a great party appetizer for sharing!

Ingredients
Bacon
2 slice - 6" long
Cauliflower Rice
1 cup
Raw Egg
1 small
Garlic
1 clove
Parmesan Cheese
1 tablespoon, grated
Lemon Peel Or Zest Raw
1 tsp
Chives, Raw
1 teaspoon, cut pieces
Olive Oil
1 tablespoon

Onion
½ medium - 2 1/2" diameter
Salt, Sea Salt
¼ teaspoon

Step 1
Add the cauliflower rice to a small pan. Add a tablespoon of water and cook gently for a minute or two until the rice is just tender. Leave aside to cool for a moment then drain away any excess liquid.Step 2
Heat the olive oil in a skillet over a medium heat and add the bacon, cooking until crisp and golden. Set aside to cool.Step 3
Preheat the oven to 400 Fahrenheit and grease a shallow oven tray with a little oil.Step 4
Mince the garlic and finely dice the onion. Add to the pan with the bacon grease and sweat gently until tender. Allow to cool a little.Step 5
Add the cauliflower rice to a mixing bowl along with the ground almonds, lemon zest, parmesan, onion and garlic. Finely chop the chives into the bowl and crumble in the bacon. Season to taste and stir well to combine.Step 6
Add the egg and mix well.Step 7
Divide the mixture into 12 even portions and form into croquettes.Step 8
Arrange across the greased oven tray and transfer to the oven to bake for 15 minutes until golden brown all over and cooked through.

Can you use almond flour instead of ground almonds?

Hi Linda, i haven't tried using the flour instead of ground, however the ground almonds have a coarser texture that I needed for the recipe. You should be able to use the flour, but the texture would be different.
