Fluffy, soft Keto Loaf Bread (recipe from this site) is sliced thin and layered with two stacks of cheese. The bread is slathered with room temperature salted butter and placed in a hot saute pan until each side is deliciously golden brown, and the center cheese is completely melted and oozing. You will love how low carb and easy this grilled cheese is.

What kind of cheese should I use?

We opted for American cheese because it is the gold standard for grilled cheese and also melts the easiest. If you use other types of cheese, just account for how easily they melt. Harder cheeses like a sharp cheddar will take longer to melt, therefore, will need to be on the lowest heat possible for longer versus a softer cheese like gouda. Feel free to mix up what slice cheeses you use for this as dill Havarti, Swiss cheese, Pepper Jack are all fun options.

Do I have to use butter for the toasted bread?

If dairy is an issue for you, you can use solid ghee or mayo slathered on the bread instead of room temperature butter. Salted butter has the best flavor, though.

  • Step 1

    Slice your Keto bread if using homemade bread. Each slice should be around 1 oz each. Preheat a nonstick small skillet over medium-high heat until hot. In the meantime, take your Keto bread slices and slather them from end to end with room temperature butter. Feel free to use ghee or mayo too.

    Fold both pieces of cheese in half and place each on a slice of bread (non-buttered side). Place another slice of bread on top, buttered side up to make a sandwich.

    Turn the heat down to very low and add the sandwiches to the pan. Allow them to cook for several minutes about 5 minutes per side until the bread is golden brown and delicious and the cheese on the inside is melted. The bread should be crispy.

    Really good! I made 1 serving if tge bread recipe in the microwave and then followed the recipe for 1 serving. Delish! Even the bread was quite good! Will make it again.

      Made this for dinner and I couldn’t taste the difference with the bread…my keto bread of choice is Orowheat keto bread…one of my favorite

          Try Lewis bread. They have cinnamon bread and buns. Awesome. If they don’t have them in your store, you could go online and have the bread shipped to you.

          Carbonaut has 1gram net carbs 40calories and 14 grams of fiber all in one slice it is plant based and does not crumble or fall apart no large air holes either. I have to be gluten free and the bread is tasty and wonderful.

          This was very good, but small. I ate it too fast 🤣 I had a side salad of cucumber and shredded carrots with it

            Omg this was amazing!!! I used mozzarella and ham slices and a dollop of mayonnaise, only thing I’d change for next time is the cheese and use a stronger one, possibly more of it. . great go to for a quick lunch

              What about putting a bit of mayo on the bread and toast with butter on the outside. So yummy!
