Each one of these chicken skewers is spicy, a little sweet, and coated in complex flavors! For a good protein to fat balance, you can enjoy just one skewer with your full meal, or you can enjoy them individually as a snack. These are also great for meal prepping!

Boneless Skinless Chicken Breast

Olive Oil

Coconut Milk

Step 1
Lay your chicken breast on a clean, flat surface and cut it up into 1-inch cubes. Place all the chicken cubes in a large ziploc bag.Step 2
Add all the other ingredients into the bag. Move the chicken around until all the pieces are coated evenly. Then, zip up the bag and allow it to marinate in your fridge overnight or for at least 12 hours.Step 3
The next day, preheat your oven to 375 degrees and soak six, 6-inch skewers in water. Once the skewers have soaked completely, fill each one with 5-6 pieces of marinated chicken.Step 4
Spray a baking rack with pan spray and arrange the skewers on top. Place the rack in the oven, and bake the skewers for 35 minutes.Step 5
Enjoy these chicken skewers as a hot or cold snack or as an addition to your meal!

This is the best jerk chicken recipe. I didn’t skewer this recipe, I used boneless skinless thighs. They turned out delicious.

I don't have skewers and would rather just roast or bake this. Any suggestions on how to alter the cooking time/temp preparation?

You will still want to arrange your chicken cubes on a rack places over a sheet tray to catch drippings. If you bake in a dish, you will have a lot of liquid. So no change to the cooking time and temp!

This is an amazing recipe! It’s my go to. I make it a couple times a week and take to work for a snack. I dip it in tzatziki sauce and it’s amazing!

Can this be done without the coconut milk like a dry rub instead?

You could omit the coconut milk and use the spices as a dry rub. If you need an alternative to the coconut milk due to allergies, you could use a dairy milk or olive oil.
