Low Carb Zucchini Chips

Potato chips may be out of the question, but there are plenty of low carb vegetables that crisp up into the perfect crunchy snack! These zucchini chips are lightly salted and peppered, but they get an addictive flavor upgrade thanks to refreshing dill and zesty lemon. They won’t be strong enough to scoop up any dip, but you won’t even have time for dip when you inhale an entire serving of these chips in minutes!

Ingredients

  • Step 1

    Preheat an oven to 225 degrees. Prepare a sheet tray with a lining of wax paper or parchment paper - parchment will be best. Slice the ends off a small zucchini, and thinly slice it with a mandolin or a sharp knife.

    Lay out the zucchini slices and place a paper towel over them. Use a heavy plate, tray, etc. to press down the zucchini to remove excess moisture. Throw away the paper towels and arrange the zucchini slices on the prepared sheet tray.

    Sprinkle all seasonings over the zucchini chips. Then, drizzle the olive oil across the tray. Bake the chips for approx. 1 hour or until the chips are golden brown and crisp. You may flip the tray around half way through to encourage even baking. Let the chips cool before enjoying!

    These were a mess. I did exactly as the recipe stated. I even ended up with 35 pieces on my zucchini. An hour and they were not even close to being done. Wet and not tasty. I won’t be doing this recipe again.

      Some healthy variations: if you slice the zuccini diagonally they are bigger and potato chip shaped, I lightly brushed mine with ghee or olive oil just enough to make the seasoning stick ( anything ya like) and I placed in a food dehydrator at 120 degrees F to not denature the enzymes and let them go about 2 days to get crunchy. Not quite as good as baking but still great and they hold up to dip. Sliced maybe 2-3 mm thick, no pressing out water either. Favorite seasonings: finely ground parmesan cheese salt, garlic and pepper. Or salt and wasabi paste!

          1 serving is 7g. While this is a very light weight, there are plenty of chips in one serving for a snack!

        I used 2 medium sized zucchini ( after slicing patted with paper towel to reduce moisture)and tossed in EVVO, smoked paprika, garlic powder, cumin, fresh pepper and sea salt. It did take about 2 hrs. They are good. Not sure of what the serving size is either.

          I made these and they are really good! I sprayed olive oil cooking spray on parchment paper, laid them on the parchment and gave the top side another light spray then sprinkled with pink salt. I flipped them after 50 minutes and put back in for 20-25 mins. If they aren't paper thin they will take 2 hrs or better!

                What’s the serving size?? Is it the entire zucchini?

                  I believe it to be one serving per recipe. I believe the nutrition info is incorrect because it says a 6 oz zucchini is used and one serving therefore the 7g is not possible for the calculations.

                  Looks like one serving is the same as 1/4 ounce or 7 grams - not very much.
