These delicious breaded chicken thighs are coated in a smokey BBQ Mayonnaise and breaded in seasoned ground almonds before being baked until crisp and golden.

Step 1
Preheat the oven to 400 degrees Fahrenheit and lightly grease a shallow oven tray.Step 2
Add the ground almonds to a mixing bowl along with the dried oregano, salt and pepper. Mix well to combine.Step 3
In a separate bowl, mix the mayonnaise, tomato puree, cumin, cayenne pepper, paprika, garlic powder and onion powder.Step 4
Take one chicken thigh at a time and liberally coat it with the BBQ mayonnaise.Step 5
Tip the ground almonds out onto a clean work surface and roll the coated thighs in the almonds so that they are completely covered in the crumb.Step 6
Arrange the coated chicken pieces on the oven tray and bake for 30 - 35 minutes until crisp and golden brown all over, and the chicken is cooked through.

Really enjoyed this. A tad heavy on the cayenne but my sinuses are happy. Substituted salsa for tomato purée. Would make again.

This was my first time to make this dish and I used my air fryer for the first time. The chicken was delicious and very tender inside. We will definitely make this again.
