    Preheat the oven to 400 degrees Fahrenheit and lightly grease a shallow oven tray.

    Add the ground almonds to a mixing bowl along with the dried oregano, salt and pepper. Mix well to combine.

    In a separate bowl, mix the mayonnaise, tomato puree, cumin, cayenne pepper, paprika, garlic powder and onion powder.

    Take one chicken thigh at a time and liberally coat it with the BBQ mayonnaise.

    Tip the ground almonds out onto a clean work surface and roll the coated thighs in the almonds so that they are completely covered in the crumb.

    Arrange the coated chicken pieces on the oven tray and bake for 30 - 35 minutes until crisp and golden brown all over, and the chicken is cooked through.

    Really enjoyed this. A tad heavy on the cayenne but my sinuses are happy. Substituted salsa for tomato purée. Would make again.

      This was my first time to make this dish and I used my air fryer for the first time. The chicken was delicious and very tender inside. We will definitely make this again.
