Step 1
Combine strongly brewed coffee, 1 ½ cups of water, and 4 tbsp of the coconut cream, along with half of the agar agar powder. Whisk well. Also, combine the remaining coconut cream and 1 ½ cup water with the remaining agar agar powder. Whisk well.Step 2
Place them both over medium heat and bring to a boil. Lower the heat down to bring both mixtures to a simmer. Allow simmering for 1 minute, stirring occasionally. Once the minute is up, turn the heat down to the lowest setting to keep the agar mixture warm. If it begins to cool down, it will set! Make sure to stir it occasionally, so a skin does not form on the top.Step 3
In a 3 liter sized rectangular container, pour ½ cup of the coffee mixture on top. Place in the fridge to set.Step 4
Once set and firm to the touch, add ½ cup of the coconut cream mixture on top of the coffee layer.Step 5
Repeat until both mixtures are used.Step 6
Chill until set about one hour or overnight. Invert and cut into 70 small squares and enjoy!
