Easy Low Carb Thai Fried Rice

If you need an easy side dish to an Asian-inspired meal, try this Keto Thai food recipe! You may be used to Chinese fried rice, which typically contains vegetables and scrambled egg. This Keto Thai fried rice is a little bit different and includes peas, cashews, pineapple, and some hot peppers. There’s plenty of basil in the dish too (if you can find Thai basil to use, that would be even better). You might think the ingredient combination is a little strange, but the dish is sweet, hot, savory, and has fat. The fat doesn’t just come from the oil used, but from the cashews as well. Cashews are a great source of healthy fat on a low carb diet!

What makes the recipe Thai?

You wouldn’t consider this a traditional Thai dish. Think of this Thai fried rice as a fun twist on a favorite side dish. Adding pineapple, cashews, and fresh basil to fried cauliflower rice gives you a mix of fresh flavors and textures to enjoy. Don’t forget a little classic Thai spice too with some red chili peppers.

Can I eat pineapple on the Keto diet?

It’s not normally recommended to include a lot of fruit on a low carb diet. If you generally choose a low-carb diet or “dirty” Keto, there are ways to strategically include favorite foods in moderation. In this case, a small amount of pineapple is included in the recipe for flavor. It’s not recommended you eat this dish every day, but every now and then it is okay if you’re tracking your macros.

Red chili pepper substitutes

Don’t like spicy food? You can just omit the red peppers in the recipe. No other spicy ingredients were added to the dish. If you want to substitute the peppers, go for red bell peppers. They’re much sweeter but still have a peppery taste. You can experiment with other hot peppers too. Just remember the general rule: the smaller the pepper the hotter you can expect it to be!

  • Pineapple, canned in juice, drained

    Fill a small bowl with frozen peas or drained peas from a can. Chop the cashews and red chili peppers, and add the ingredients to the bowl. You’ll also need to include chopped pineapple from a can or fresh pineapple.

    Heat sesame oil on high heat in a non-stick saute pan. Wait until the oil starts to smoke, then, add the bowl of ingredients. Cook the ingredients over high heat while stirring occasionally until they turn golden, particularly the pineapple.

    Add cauliflower rice (your choice of fresh cauliflower or thawed from frozen) to the pan. Keep the heat high while you cook the rice until the cauliflower begins to char, stirring occasionally. Then, pour the soy sauce over the rice.

    Keep cooking the rice while stirring all of the ingredients. Once the rice absorbs all the soy sauce, it will continue to cook to a golden brown color. Take the fried rice off your stove and add chopped basil. Stir one final time before serving.
