  • Step 1

    Break chocolate into pieces and place in a microwave safe bowl. Microwave in 30 second increments, stirring each time until melted. Once there are a few small unmelted pieces left in the chocolate, stop microwaving and just mix until it is completely melted.

    Stir in slivered almonds and unsweetened coconut flakes. Spread into a thin layer about ¼” thick.

    Sprinkle with chia seeds, pistachios, more coconut flakes and freeze dried strawberries. Freeze until firm and break into 12 pieces.

    Awesome! I made a twist on this using Lily’s unsweetened semi-sweet style chips. Based on what I had on hand and to fit my macros, I omitted the almonds and chia, and only used 3g freeze dried strawberries 4 Tbs of coconut. It was still a beautiful, delicious bark and instead of 12 servings, yielded 8.

      I’ll add that even though I made my serving size bigger, the net carbs were still 3g and then protein 1g and fat 6g.

      Can you use fresh strawberries with this and can I use other berries?

        If you use fresh fruit, your bark may not set and won’t keep as well. I’ve made and read a lot of chocolate bark recipes, and it’s always with dry ingredients and toppings. Maybe if you keep it frozen you’d be ok in a pinch? But you’d want to double-check macro differences between fresh and freeze-dried, too

        No, it defeats the purpose. You can dehydrate your own strawberries in a dehydrator or oven on a low temperature until dried. About 100 to 150 Fahrenheit.

          I hope you do! You can make the batch and then it freezes really well. I like to take a few pieces out at a time and I love that it's super cold from the freezer.
