Pitted Kalamata Olives by Mezzetta
6 olives
Cherry Tomato
3 cherry
Feta Cheese
2 tablespoon
Cauliflower Rice
1 cup, cut pieces
Parsley, Fresh
1 tablespoon, chopped
Olive Oil
1 tablespoon
Lemon Juice
1 teaspoon
Pine Nuts
1 tablespoon, whole pieces
Red Onion
¼ medium - 2 1/2" diameter
Cucumber
⅓ cup, sliced
Salt, Sea Salt
⅛ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Add the cauliflower rice to a mixing bowl.Step 2
Finely slice the onion and olives and finely chop the tomatoes and cucumber.Step 3
Add to the bowl along with the cauliflower rice. Crumble in the feta, season and drizzle over the lemon juice and oil.Step 4
Mix well to combine.Step 5
Scatter over chopped fresh parsley and pine nuts to serve.
