This turkey and swiss cheese cup recipe is a super easy snack that can be made in advance. Simply reheat these cups in the microwave when you’re on the go! For this recipe, make sure the brand of cheese you choose uses 100% real cheese. Otherwise, the shredded cheese won’t melt properly. Just a touch of seasoned egg binds the ingredients together.

  • Turkey

  • Swiss Cheese

    ¾ cup, shredded

  • Raw Egg

  • Step 1

    Preheat an oven to 350 degrees. Spray 6 muffin tins with pan spray. Then, line each muffin tin with a slice of turkey. You can gently fold the edges over each other so they fit in the tins. Fill each cup with about ⅛ c. of the swiss cheese.

    Whisk together the eggs and a pinch of salt and pepper. Pour the egg mixture evenly over the cheese in the turkey cups.

    Bake the muffin tins on a low rack in the oven for about 18 minutes or until the edges become golden and the egg has cooked through. Enjoy hot while the cheese is still melted and gooey!

    Delicious. I just wish we could modify the ingredients because I ended up using four eggs because my eggs were small and I used ultra thin provolone instead Of Swiss.

            To make sure you get an even distribution of egg, you can mix the cheese and egg together in a bowl and then use a small scoop to fill the muffin tin.

                  Don’t buy deli meat;) Buy organic sliced turkey breast with a low sodium content. Alternatively you could roast an organic turkey for the most delicious turkey breast ever:)

                  In UK you get a brand called Finnebrogue .. they do “Naked” ham and bacon with no preservatives.

                  I NEED extra salt since being on keto has lowered my blood pressure and to prevent leg cramps! However I don’t want the preservatives on most deli meats

                  I make mine with ham. I also crack an egg into each cup and add a teaspoon of cream fraiche—no cheese. I guess it’s a different recipe!

                How much egg mixture should go into each muffin?

                  Each cup gets very little egg - only about 1/3 of a whole egg. Fill the cups no higher than the rim of the muffin tins. Your turkey slices should help keep the ingredients in place during baking.

                        Super delicious as I changed.the cheese to Kirkland brand Colby jack shredded and topped the a slice of roma tomato. Had avocado on the side. It was amazing.
