Keto Cranberry Relish
This low carb relish is a great festive side to accompany cheese or cooked meats. Tangy cranberries are combined with sweet red onion and balsamic vinegar with a hint of festive spices.
If you would prefer a sweeter relish you can add a little extra low carb sweetener.

Ingredients
Unsalted Butter
1 tablespoon
Cranberries, Fresh
1 cup, whole pieces
Balsamic Vinegar
1 tablespoon
Cinnamon
1 teaspoon
100% Pure Erythritol by Now
1 tablespoon
Salt, Sea Salt
¼ teaspoon
Red Onion
¼ large
Black Pepper
⅛ teaspoon
Cloves, Ground
⅛ teaspoon
Water

Step 1
Finely slice the red onion. Heat the butter in a small pan and add the onion, sweating until tender.Step 2
Add the cranberries, cinnamon, cloves, erythritol, water, balsamic, salt and pepper.Step 3
Bring the mixture to a simmer, stirring well to combine. Continue to simmer over a gentle heat for 15 minutes, stirring often, until thickened and reduced to a chutney consistency. This will thicken further on standing.

I followed the directions but did triple the recipe (3 cups of cranberries, etc). This had the most awful aroma and a fowl onion flavor that just didn't belong in cranberry sauce. It did not thicken up very well. If I was going to try this again I might mix in pickled onion after it cooled and omit the butter.
