Recipe Steps

  • Step 1

    In a microwave-safe mug, melt the butter in the microwave.
    Step 1

    Add in the sour cream, confectioner’s sugar, coconut flour, baking powder, vanilla extract, and egg. Mix well with a spoon to combine.

    Drop in the raspberry jam. If the jam is slightly warmed it will swirl better. Swirl in the jam with a butter knife. Then microwave the cake on HIGH for 50-60 seconds (adding more or less time depending on your microwave). You will know when the cake is done when it is puffed and there is no liquid on the bottom. Enjoy!

            This is tasty and I like the addition of raspberry for a little fruity flavour. I switched out the egg for egg whites and drizzled a little sugar free glaze on top. I would also recommend cooking it for 60-70 seconds.

                If you’re new to keto (like me) and were looking for something for your sweet tooth this didn’t really foot the bill. HOWEVER this was delicious. I could eat this in the afternoon with coffee. But initially I had hoped it would be my late night snack.

                    This tasted so amazing! Mine however were a little too moist...no matter how long k microwaved the texture was a little mushy. Anyone know why?

                    Followed recipe as written. The only change I will make is to beat the egg until well mixed in a separate bowl before adding to the batter.

                    Delicious! I love pastries and giving them up is the hardest part of doing keto for me. I was so happy when I stumbled across this recipe. I used everything the recipe called for except coconut flour, because I hate coconut. I used almond flour instead which maybe why the cake fell down, but was really good nonetheless. I added a hint of extra butter and jam on top. I will making this for breakfast to go with my tea.

                      If you use almond flour instead of coconut flour next time, triple the amount to 3 tbsp.

                      Great stuff! I used 5 real raspberries instead of the jam. Cancelling out the bitter taste of baking power just fine!

                        I used fresh raspberries too and instead of sour cream used 5% greek yogurt. I actually forgot to add the sweetner but it's still so good!

                      I added 1/2 teaspoon of cocoa powder and some sugar free chocolate chips! Instead of a mug cake, I made waffles and topped it with a bit of peanut butter and raspberries!

                        It looks amazing! In order to get the nutrition from the fruit, has anybody tried it with muddled, warm blueberries or strawberries? Yogurt instead of sour cream? Anyone add ground flax seed or chia seeds? Cannot WAIT to start experimenting tomorrow morning!!

                        I love this a today I used the batter to make pancakes and the I microwaved my raspberry jam and used it as a syrup...adds a couple additional net carbs but satisfied my need for some pancakes and was fantastic. I also enjoy it as a mug cake

                              I suggest using only an egg yolk and adding an extra tablespoon of flour and it is simply incredible! I have this for breakfast often and it keeps me full and happy for a while into the day.

                                LOVE LOVE LOVE this. I was craving something sweet after tea so after scrolling through the dessert recipes I found this little gem. I didn’t have sour cream so I used normal cream and it was amazing !! I will definitely make it again, and I will try it with the sour cream, but honestly, I was so happy with it I did a little moan of delight with the first spoonful ....lol
