These strawberry cheesecake bites are the ULTIMATE low-carb treats to keep you in fat-burning mode. They are fruity, refreshing, and super creamy. These Keto cheesecake fat bombs have the perfect texture and the right amount of sweetness to satisfy your sugar cravings. They are effortless to prepare and require less than 5 ingredients. This Keto cheesecake recipe is a crowdpleaser, so make sure to double the recipe.

What are fat bombs?

A fat bomb is a snack made almost entirely of fat, combined with other Keto-friendly ingredients to add sweetness and flavor. Most fat bombs are made with nut butter, coconut oil, butter, or cream cheese. This recipe uses cream cheese and heavy cream as the fat sources and strawberry flavored gelatin powder for sweetness and flavor.

What are some fun ways to customize these fat bombs?

These cheesecake bites are super versatile and can be customized in many different ways. You can mix in fresh or freeze-dried strawberries, sugar-free jam, or lemon juice and zest. You can also roll these bombs in a Keto crumb for a toasty flavor and an added texture.

Can you make other fruit flavors using this recipe?

Of course, you can! This recipe can be easily adapted to other flavors. Simply swap out the flavor of gelatin. Some delicious options include lemon, cherry, and peach. Just make sure that you are using sugar-free flavored gelatin.

How to store these fat bombs?

These fat bombs are one of the softest Keto-friendly cheesecake recipes you'll come across. This is why it is essential to use mini cupcake liners to keep them from smooshing together. Once these fat bombs set, store them in an airtight container in the refrigerator for 5 days or 3 months in the freezer.

I added 20g of jello mix which was all of a large box of sugar free jello. It made the recipe rubbery and it tastes too much like fake sugar. I will try it again with 4g jello mix and see how it goes.

I doubled the cream cheese and whipping cream. And used 2 10g packages of sugarfree raspberry jello. It didn’t really set to the correct texture but I scooped it into muffin liners and froze them. It does taste good maybe a little strong on the raspberry flavour but my personal preference is to have a stronger cream cheese flavour.

That’s my usual way to make them. But I use 2 pkts of the jelly to One cup of boiling water. When cool, add to 250g of cheese and half cup of cream. Get right firm texture. All flavours of jelly. Add berries to match flavour and that’s my daily desert.

I just made this with vanilla Berry Aeroplane sugar free jelly (Australia). Delicious. Even hubby loved it. Have frozen some to have as icecream balls. Yummy, but hard to stop at one.😊

Maltodextrin (in the Jello) is a no-no on low carb keto. It kicks me out of ketosis so fast, almost makes me dizzy! lol

Is there a list of things like this that may kick you out of keto? My body just won't go into keto with 20 net carbs and I can't figure out why.

Try Simply Delish strawberry gelatin which is sweetened with stevia instead.

I was really expecting to love this, based on the ingredients and the reviews. But I taste the artificial sweetener in the sugar-free Jello. And the cream cheese taste is too strong for me.

Absolute winner! And I love that I can change it up just by changing the flavour of the jelly. For Aussie members, just one 9g sachet of sugar free jelly. But trust me, you’ll want to double the recipe!!

So delicious! Every person who tried it loved it. I don’t like to keep partial packages open of jello so I doubled the cream and cream cheese and added the entire box of sugar free jello. Fast, easy and delicious! I used silicone cupcake molds they offered good stability. I also weighed out each portion and the cookie scoop I have was the right size for 39 grams!
