Slow-cooker meals are great for planning ahead, especially while on a low-carb diet which involves a lot of protein. This meal is one of my favorites because I love Indian food. This is a mild version, but feel free to add slices of jalapenos to the pot!

  • Step 1

    Heat medium saute pan over medium-high heat, add ghee once pan is hot. Then add the diced onion, minced garlic, minced ginger and garam masala. Stir until spices are fragrant and onions are beginning to brown. Add tomato paste and cook until slightly darker in color. Add salt.

    Dice chicken into large 2” pieces and toss into the bottom of a 4 quart slow cooker, as well as the lime zest (optional), lime juice, coconut milk and chicken stock. Also add the onion and tomato paste mixture to the slow cooker. Mix together to combine. Then set slow cooker to low and cook for 7-8 hours until chicken is tender.

      3lbs/4=¾ pound of chicken (340g), plus all the other ingredients, doesn’t add up to the 100g weight of the serving size! I think the nutritional facts are badly off! 😳

    There’s no way these nutritional facts are correct? Meals ok I recommend using more seasoning than what the recipe calls for. I don’t trust the nutritional facts so I won’t be making it again.

      The facts have to be off, as the weight of the chicken alone, not to mention the other ingredients, divided by 4 doesn’t line up with the weight of a serving size!🤨

    Delicious I did add additional spices cardamom seeds, cumin, cinnamon stick tasted great will make again

        Probably the tomato paste. Tomatoes are quite high carb, & paste is an extreme concentration of tomatoes! 🥴

      Made this yesterday. Doubled the garam Masala (added the second half at the end, added black cardamom and cayenne. Still, well, a very “white” and bland curry. I’ll go back to tweaking my Indian recipes and won’t be making this again.

        Made this today. Absolutely delicious but I made a few changes that don’t change nutrition values. Doubled Garam masala, added cumin, coriander, cinnamon, and cayenne. Also added lime zest and the juice of the entire lime. Half the juice at the beginning and the other half near the end of cooking. Served with cauliflower rice and a low carb tortilla to take the place of naan, which is how it is served in restaurants.

            Tried making this in a wok opposed to a slow cooker and it is so much nicer imo. we did everything the same except we browned much smaller cubes of chicken and added the liquids/onion/spice mix.... we found the slow cooker was overcooked, this method was juicy and far tastier and ready to eat in less than 30 minutes

                      I am questioning the nutritional info for keto diet 2. I noticed that the calories are double what I’m supposed to eat each day. The first week was close. Now this second week is all above what I Shld eat and I clicked adjust to my macros. Anyone else question week 2.

                          It is because the portion of chicken per serve is quite large. 340 grams per person. I’d only eat a 200 gram piece tops.

                          I made this exactly as stated in the recipe. It has delicious flavors and is a great way to keep meal time interesting. Will make again. It is also good over steamed broccoli!

                            I loved this, but I added spices that were listed on the side of a box of ready make butter masala I picked up from a Pakistani restaurant/store in town when I got the masala. Made from recipe 1st, then started adding stuff listed on the box under ingredients, like cardamon, cumin, red chili, white and black pepper, and a few others. Took it from ok but plain to amazing and just like the Indian place in town. :)

                                I have the same question, this is more protein than I’m supposed to have all day. I googled how many grams of protein in 3/4 cups of diced chicken breasts and it said it’s only 30. I’m confused.

                                Because a serving is 3/4 pound of chicken breast (105g protein) and the garlic, ginger, and onions all contribute carbs
