Keto Bagel Bites with Jalapeno Cheese Filling
These jalapeno cheese stuffed Keto bagel bites are soft, chewy, spicy, and incredibly flavorful - no one will know that they’re low-carb! These Keto bagel bites are made using fathead dough and coated with a delicious bagel seasoning.
How can you store these Keto bagel bites?
Once baked, you should let them cool completely. Once cooled, you can place them in an airtight container, where they will stay fresh for 1-2 days on your counter or up to a week in your fridge. When you’re ready to eat one, microwave for 10 seconds to get the cheese oozing.
Can you fill these bites with something else?
Absolutely! Instead of jalapeno cream cheese, you can use any cheese you prefer, whether plain or flavored. Some great options include cheddar, blue cheese or feta.
Should you be worried about the sugar in the dough?
While it is a no-no to add sugar to any Keto recipe, this recipe is an exception. The yeast will feed on the sugar and produce carbon dioxide, aka the bubbles that cause bread and baked goods to rise. So basically, the yeast will activate by consuming the sugar, leaving you none.
Do you have to use bagel seasoning for this recipe?
You don’t have to, but it sure makes it a lot tastier, especially if you’re filling these bites with cheese as we did here. You can replace the bagel seasoning with sesame seeds, black sesame seeds, or poppy seeds. You can also roll the balls in grated parmesan cheese for a crispy golden outer shell.

Step 1
To a small bowl, add the sesame seeds, black sesame, poppy seeds, dried onion and garlic, and salt. Whisk to combine. Set the seasoning aside for later.Step 2
To bloom the yeast, add the yeast and sugar to a bowl. Pour in the water, making sure it is lukewarm. Whisk and place the bowl in a warm place for 10-15 minutes. The yeast is ready when there is foam or bubbles on top.Step 3
Add the almond flour, xanthan gum, baking powder, and salt to your food processor. Pulse to mix, then add the egg. When the yeast has done proving, add it to the food processor with the rest of the ingredients. Pulse for 10-20 seconds until combined.Step 4
In another bowl, combine the mozzarella cheese and 2 tbsp cream cheese. Heat in the microwave until the cheese is melted. Stir until smooth.Step 5
Add the melted cheese to the food processor along with the dough. Process until a uniform dough forms. Scrape the sides and process again.Step 6
Transfer the dough to an oiled bowl and smooth the top with a spatula. Cover the bowl with plastic wrap. Let it prove in a warm place for 1 hour.Step 7
Preheat your oven to 325 Fahrenheit, and line a small baking dish with parchment paper. To a small bowl, add the remaining 2 tbsp cream cheese and finely diced jalapeno. Mix to combine.Step 8
Oil your hands and divide the dough into 8 pieces. Roll them into perfect balls and place them on the baking sheet. Flatten them with your palm, and add in 1 tsp of the jalapeno cream cheese.Step 9
Pinch the dough to close it around the cheese. Make sure the dough has no openings. Meanwhile, add the egg yolk and 1 tbsp of water to a small bowl and whisk together.Step 10
Working with one at a time, take a ball and submerge it in the egg yolk mixture, then roll it in the bagel seasoning. Repeat with all the bites, place them on the lined baking sheet, and cover them with a piece of plastic wrap. Let them prove for 10 minutes in a warm place.Step 11
Bake for 8-12 minutes until they become slightly golden and have doubled in size. Set them aside to cool before handling. Enjoy them warm, or store them in an airtight container for later.

Delicious, however I added more filling to my liking. Family loved them! Another tweak- dipping in the seasoning makes it salty in my opinion, its too much. Second time I made them I just sprinkled everything bagel on the top instead of dunking in the seasoning.
