  • Step 1

    Season one side of a small chicken thigh with salt, pepper, and italian seasoning. Cook the chicken in olive oil in a small pan over medium high heat. Cook the chicken for 4-5 minutes per side, until golden brown. Set the chicken aside to cool when done.

    In a small mixing bowl, combine diced cucumber, diced red onion, and caesar dressing.

    To arrange your salad, rip or cut up the romaine lettuce. Top the lettuce with the cucumber dressing mix. Then, slice and arrange the chicken on top. Follow this with shaved or shredded parmesan cheese. Enjoy warm or cold!

        I love making salads! May I suggest using a mix for the greens , I use half spring mix and half spinach since ( correct me if I’m wrong! ) they have nutrients and romaine lettuce has little nutrients. ( I used to eat Romain lettuce all the time, in all my meals, and I thought I was being healthy, or at least getting my nutrients…until I realized it was mostly just water, I think… after that I switched to spinach or salad mixes that come in boxes.

          I’ve also read (Green Smoothie Cleanse) eating the same greens all the time can cause problems — best to alternate or I’d guess as you’re doing — mix them up. 🙏😎🖖

          Although it's low in fiber, it's high in minerals, such as calcium, phosphorous, magnesium, and potassium. It's naturally low in sodium. Plus, romaine lettuce is packed with vitamin C, vitamin K, and folate. It's a good source of beta carotene, which converts into vitamin A in the body

        Looks great! I make a jar of pesto type salad dressing/ meat marinade/ veggie roasting oil. I add fresh chopped basil to my food processor, drizzle in olive oil until it's at a nice consistency. Add it to a mason jar. Mix in garlic, I like roasted garlic...but using powder is fine too. Salt, pepper and a wee bit of onion powder. Add a good amount of lemon juice to taste. Add in some shredded parmesan when you're using it...great for a ceasar and a Greek or on your zucchini noodles. It's cheap, handy and you know what's in it, I don't buy bottled anymore.

          Delish! Always looking for something quick and easy to do with my leftover rotisserie chicken. Made my own ceasar dressing with mayo, minced garlic, lemon juice, worcester, salt & pep. Hit the spot!

              Thank you for reply “recipewriter” 👍🏼 I was wondering the same thing I use Renee garlic lovers Caesar salad dressing. It tastes so amazing that I feel like it has to be the worst thing for me but I’m not sure if it is , it doesn’t seem like the worst when I read the nutritional label though

              Check the nutrition label on your dressing. This recipe's dressing has 1g carbs, 17g fat, and 1g protein per 2 tablespoons.

              You would simply be missing out on the flavor and texture the cucumber provides as well as 1-2 g carbohydrates.

            Are chicken "thighs" important? I buy bags of frozen chicken breasts - those are zero carb also.

              Chicken breast is absolutely fine here! Chicken thighs simply have a little more fat.

            Delicious. Includes Greens, Cucumber and Red Onion, which cut the sense of being "too fatty". Satisfying and the numbers work out in the balance. Don't forget to burn off thiose fats with exercise...
