Ingredients

  • Almond Butter

  • Xylitol Sweetener

    Xylitol Sweetener

  • Spices Cinnamon Ground

    Spices Cinnamon Ground

  • Pecans

    Pecans

    ⅓ cup, halves

  • Salt

    Salt

    ⅕ teaspoon

  • Step 1

    Preheat the oven to 340 degrees Fahrenheit and line a shallow oven tray with baking paper.
  • Step 2

    Add the almond butter, egg, xylitol, cinnamon, baking soda and salt to a large mixing bowl.

    Beat well to combine, forming a smooth cookie batter.

    Add the pecans to the bowl and stir them evenly throughout the dough.

    Using your hands, divide the mixture into 12 even balls and arrange on the lined baking tray. Press the dough down to form thick cookies, leaving about an inch between each cookie (they will spread when baking).

    Place the tray in the center of the oven to bake for 10-12 minutes, until golden brown.

    Allow the cookies to cool completely and firm up before serving.

    This is a good way to get in fat. These are great, but wasn’t sweet enough for me. I sprinkled sweetener on top of cookie. Next time adding more sweetener. They came out of the oven chewy and they were great, but I prefer my cookies crisp, so I left them out of container. Very crspy.

      I dont know where I went wrong but they are powdery and horrible. They look nothing like on the picture and haven't spread out at all! went in the bin

          That’s what I used, and added about 1/4 cup additional allulose sweetner

        Instead of xylitol can I use organic powder stevia?

          Hi, I have not tried the recipe using peanut butter so I am unable to say for sure if it would work. It would also increase the carb count so you would need to factor this in. Hope this helps.

        I added about a 1/4 tsp of nutmeg...awesome!! Also, I didn’t bake until firm and that helped them not be dry

        I've just made these without the liquid sweetener as the only type I can get is so tinny and horrid to the taste...added a glug of natural honey...seems to taste ok...lets see how they are when they come out the oven!

            I have not tried them without any sweetener, however I think it would definitely be worth a try. You could perhaps add a little extra cinnamon or maybe even try making them with cashew butter or pecan butter as they are naturally a little sweeter than almond butter. They may come out a little more chewy without the sweetener but I think they would still hold. Let us know how you get on!
