  • Cheddar Cheese

    1-¼ cup, shredded

  • Jalapeno Peppers

    2 large - approx 4" - 6" long

  • Step 1

    Lay your chicken thighs out flat and sprinkle the salt, pepper, garlic, and onion powder over them.

    Heat the olive oil in a pan over medium-high heat. Place the chicken thighs seasoned-side down in the oil and place a lid over the pan.

    Cook the chicken thighs for about 5 minutes per side or until they naturally release from the pan and are lightly golden brown. Once done, set the chicken thighs aside to cool slightly.

    Preheat an oven to 350 degrees. Spread the cream cheese across the entire bottom of a standard 8x13 glass baking dish. You may let the cream cheese sit out to soften slightly for easier spreading.

    Use a pair of forks to shred the chicken thighs into loose shreds. Spread the chicken over the cream cheese. Then, sprinkle the cheddar over the chicken.

    Dice the jalapenos and sprinkle them on top of the casserole. Loosely wrap foil over the top of the baking dish and bake for 20 minutes. At your discretion, you may then remove the foil and continue baking for a golden crust on the edges of the casserole.

        I thought this was great, but I wished my jalapeños were softer. I think I will switch up the layers and see if they soften better if they are under the chicken.

          absolutely delicious.. I also added a layer of cauliflower, rice and sprinkled bacon on top, help me get my fats in and it was the first time I tried cauliflower rice it was fantastic!!!!!

                Delicious! I usually add a little more cream cheese so that I can use a 9by 13 pan. This gives us a few more servings.

                  Love this. I did make the mistake by adding extra jalapeno. Maybe my jalapeno batch was very strong and this was hella spicy. I ate it anyway it was amazing. But not for the rest of the group. Test your jalapenos before you throw them in. If you're happy with the spice and stick to the recipe. I usually like spicier but you can always add more later I guess. I had the whole thing to myself LOL. I'll definitely do this again and my family loved it.

                  I mixed the cream cheese, cheddar cheese, jalapeño and added bacon bits then spread on top of chicken. Chicken came out so tender. Will definitely make again.

                  I layered with cream cheese, chopped chicken thighs, jalapeños, then cheese on top. Wish I would have remembered my avocado on the counter 🤦‍♀️ Paired with cilantro lime cauli rice and it was delicious!!

                    Loved it! My husband even asked me to add it to the regular rotation! I used canned chicken for a super quick version (ran out of time to cook and I hate shredding meat) and it was still awesome!

                      We had this tonight and it was a hit! Will def make this a regular. I made the crispy chicken thigh recipe yesterday and used left over chicken (2.5 thighs). Also topped with uncooked bacon and just broiled it for a few minutes until the bacon was nice and crispy. We served it on romaine lettuce and ate them like tacos. My 8 yr old said this was delicious.

                        Super fast and tastes great. To bad you can’t put photos on here. To make it faster I used Costco rotisserie chicken. I also put bacon bits on top.
