Chicken Thighs (Skinless & Boneless)

Cherry Tomatoes
1.5 cup
Feta cheese
1 cup, crumbled
Extra virgin olive oil
3 tbsp
Lemon juice
0.5 each - juice from one lemon
Crushed Red Pepper Flakes
1 tsp
Salt
0.5 tsp
Garlic
3 clove
Parsley
0.25 cup, chopped

Preheat your oven to 200C/400F. Add the chicken thighs, cherry tomatoes, crumbled feta, olive oil, lemon juice, crushed red pepper, and salt to a bowl. Mince the garlic and add it to the bowl.Step 2

I used bone-in thighs. Swapped the fresh tomatoes for garlic, basil and oregano seasoned diced tomatoes and added extra garlic and oregano and some Italian seasoning blend. This was full of flavor and everyone loved it. Served on top of cabbage noodles

Very good! These tomatoes are delicious and I could eat them alone as a snack easily. The chicken was great, too but the tomatoes were the highlight for me.

I also added sun died tomatoes, make sure you don't cut the chicken to small as it will dry them out.... first time faux pas.... but the flavor was too die for. Easy to make, next time I'm adding more tomatoes and leaving chicken a little bigger.

I added Italian seasoning ,Kalamata olives, sun dried tomatoes in oil and onion and mushrooms. Very good and easy.
