Keto Jumbo Spinach and Kale Stuffed Meatballs
If dinner time has arrived, and you haven’t eaten your greens for the day, you should cook this meatball recipe that’s stuffed with chopped spinach and kale! These leafy greens are very dense in nutrition while staying low in carbs. They’re some of the best vegetables you can eat while on the Keto diet, in fact! A sprinkle of parmesan cheese makes the filling in the meatballs even more appetizing!

Ground Chuck 80% Lean 20% Fat by Kroger

Ground Sirloin by Publix
8 ounce
Salt
¼ teaspoon
Black Pepper
½ teaspoon
Onion Powder
¼ teaspoon
Italian Seasoning

Raw Egg

Spinach
½ cup, cut pieces
Spinach
½ cup, cut pieces
Kale
¼ cup, chopped
Parmesan Cheese
3 tablespoon, shredded
Olive Oil

Step 1
Preheat an oven to 400 degrees and prepare an oven-safe baking dish with pan spray. In a bowl, combine the chuck, sirloin, salt, pepper, onion powder, italian seasoning, egg, and first amount of spinach.Step 2
Divide the mixture into 4 equal parts. Use your hands to shape each section into a large meatball. Then, create a large crevice in the center of each for the filling.Step 3
Combine the second amount of spinach, kale, parmesan cheese, and olive oil in a small bowl. Then, fill each meatball with the filling.Step 4
Form the meat back over the filling, and reshape the sections into meatballs. Place the in the prepared baking dish.Step 5
Bake the meatballs for 40 minutes or until the meat is completely cooked through and have browned, crusted tops. Enjoy!

These tasted great but they were very dry. I’d suggest cooking them at a slightly lower temp and for no more then 30 to 35 minutes.

I may be missing something, but why two amounts of spinach ? Add the second one? What do you plan for the 1/2 cup?

Step one says to add the first measure of spinach. Step three says: "Combine the second amount of spinach, kale, parmesan cheese, and olive oil in a small bowl. Then, fill each meatball with the filling." So they are divided portions used at different times in the recipe, following the recipe steps.

I think the meatballs have half of the spinach in the meat. The filling has the other half of spinach in it.

Made these for our family last night. They were a hit! They are huge, so we have leftovers. The stuffing keeps the meatballs moist. We will make these again.

I’m going to try these. I think one meatball would be enough for me but if it helps me eat kale I’m going to try it. I really hate kale.

I'm a kale weirdo and love it but I understand that lots don't. I put a 1/2 cup of fresh chopped kale in my smoothie every morning so I get a little more without even knowing I'm eating it. You have to blend for a long while though to break it down so you're not getting chunks. Enjoy!

I am really confused on reading this - 1lb meat for 2 servings means each portion is 2 4oz patties/meatballs?

I think so ... it looks like the serving weight is 7.1 ounces. I'm just starting out, it is crazy but I already feel better.
