Keto Whole Roasted Za'atar Chicken
It doesn’t get any easier than roasting a whole chicken. All you need to do is pat the chicken dry, smear it with some fat, salt and spices. The key to getting a perfectly cooked chicken is using a thermometer to check for doneness. Once the thickest part of the chicken (usually the thigh or breast) reaches 165 F, the chicken is done. It’ll be so hot, juicy and delicious and you can pair it with so many vegetables and sides.

Butter
2 tablespoon
Kosher Salt

Za'atar Seasoning

Step 1
Preheat an oven to 425F. Remove chicken from packaging and pat dry with paper towels. Truss chicken so wings are tucked in and legs are tied together.Step 2
Smear softened butter over chicken and sprinkle with salt and za’atar seasoning on the front and back.Step 3
Roast chicken for about 1 ½ hours until cooked through and the temp in the thickest part of the chicken has reached 165 F.

What is za'atar seasoning? I've never heard of sumac or marjoram, but apparently that's in it?

The temperature and time are too high. If you're going for a nice crispy crust, keep the temperature at 425 for the first 20 - 30 minutes, then turn down the temp to 350. Otherwise, you'll have a dry bird. If you don't have a meat thermometer: the bird is done when you can easily move the leg and thigh by pulling them down towards the pan. Allow the bird to rest for at least 20 minutes, covered partially with aluminum foil after you remove it from the oven. This will give the meat time to soak back in the juices and even the temperature.

I cooked mine in roaster at 325 for 2 hours covered. Then take out and tent with tin foil till the gravy is made.

well the recipe says it serves 8 and the chicken is 4 lbs or 64 oz so thats a half a lb or 8 oz per serving

I didn’t have za’atar seasoning but used a recipe off the Internet for it instead. No carb problem as it’s all spices and so on low bulk. But didn’t have the sumac in the za’atar recipe so used half a lemon mutilated in a blender with a pile of fresh ground pepper. Flavour was out of this world.

No. I salt the chicken and "stuff" it with celery tops onion and fresh rosemary. So good!

If I want to spatchcock the chicken, I think I have to reduce the cooking time, don’t I? I am going to check my thigh temp at around an hour. I’m looking forward to tonight’s dinner!

Since I have to be cooking for only 1 person, I found cornish hens to be just the ticket for this. A one pound cornish hen gives a half pound single serving after cooking. I just toss two into a slow cooker and I have my two meals for the week that include this recipe.
