  • Step 1

    Dice the chorizo into bite sized chunks. Heat a tablespoon of olive oil in a skillet over a medium heat. Add the chorizo and cook until golden and it releases its smokey oils.

    Finely dice the onion and finely slice the garlic and rosemary. Add to the pan with the chorizo, cooking for a minute or two until tender and fragrant.

    Add the cauliflower rice to the pan and stir well to combine, cooking for a minute to soften the rice.

    Beat the eggs together in a small bowl. Make a well in the center of the rice mixture and pour in the beaten egg. Let the egg settle for a moment and start to cook, then take a spatula and scramble the egg, folding it into the rice mixture until cooked through.

    Scatter with fresh chopped cilantro to serve.

    Relatively simple and truly delicious! I didn't add any pepper because our locally-made chorizo is spicy enough. Thanks for a great brunch!

                Love this recipe ... only issue for me I didn’t have any rosemary but will try it again with the rosemary .
