Ingredients
Raw Egg
2 medium
Chorizo
1-¾ ounce
Red Onion
1 tablespoon
Garlic
1 clove
Rosemary, Fresh
1 teaspoon
Cauliflower Rice
1 cup
Olive Oil
1 tablespoon
Cilantro
1 tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Dice the chorizo into bite sized chunks. Heat a tablespoon of olive oil in a skillet over a medium heat. Add the chorizo and cook until golden and it releases its smokey oils.Step 2
Finely dice the onion and finely slice the garlic and rosemary. Add to the pan with the chorizo, cooking for a minute or two until tender and fragrant.Step 3
Add the cauliflower rice to the pan and stir well to combine, cooking for a minute to soften the rice.Step 4
Beat the eggs together in a small bowl. Make a well in the center of the rice mixture and pour in the beaten egg. Let the egg settle for a moment and start to cook, then take a spatula and scramble the egg, folding it into the rice mixture until cooked through.Step 5
Scatter with fresh chopped cilantro to serve.

Relatively simple and truly delicious! I didn't add any pepper because our locally-made chorizo is spicy enough. Thanks for a great brunch!

Love this recipe ... only issue for me I didn’t have any rosemary but will try it again with the rosemary .

Very good. I added more Chorizo and some chilli powder to spice it up a bit and make it more filling.
