Ingredients

  • Lemon Peel Or Zest Raw

    Mascarpone

  • Lemon Juice

  • Whipping Cream

  • 100% Pure Erythritol by Now

    100% Pure Erythritol by Now

    ⅓ cup

Recipe Steps

  • Step 1

    Add the erythritol to a food processor and blend until powdered.
    Step 1

    Add the mascarpone, lemon juice, 1 teaspoon of lemon zest and the vanilla to the food processor with the erythritol. Blend to combine until smooth.

    Add the cream to the bowl of a stand mixer with a whisk attachment and whisk until fluffy and doubled in size.

    Fold the lemon mascarpone mixture into the whipped cream until well combined.

    Fold in the remaining lemon zest.
    Step 5
  • Step 6

    Divide the mousse between 4 serving glasses. Refrigerate for 15 minutes to chill before serving.

      Trialled half the recipe to see if I liked it, to save wasting ingredients. I used Philadelphia cheese instead of Mascapone, trebled up on the lemon juice as I like it super sharp. Used powdered Ethrytol.. I topped it with soft fruit - raspberries. Which of course upped the carbs. But just gorgeous on its own. Such a decadent desert. Highly recommend this recipe. Will make it again as I want it for my packed lunch, in a little glass jar. Yum!

        Can you put all ingredients in a thermomix and blend ? Can I use monk fruit as the sweetener?

          I don't know what a Thermomix is, but I mixed mine by hand (but only used a few tablespoons of Heavy cream) to thin out the Marscapone. You can use whatever sweetener you like. I omitted the Erythritol (because it's poisonous to dogs) and I added a scoop of vanilla protein powder.

        This recipe is awesome! I used mascarpone as it’s to be a treat and doubled the zest and lemon juice (judging by the comments here). It’s delicious! I’m the only one in the household doing keto and no sugar and no one believed it was a keto recipe! Such a lovely fresh taste and perfect for summer!

              I think you have to deduct the sugar alcohol from the total carbs which brings it down to 4.

            After mixing the mascarpone with the sweetener and lemon it curdled all up. not sure why, but guessing the lemon did something?

              I would do it again with more lemon juice. I felt it lacked that nice tart flavor I want in a lemon dessert.

                        Can we use stevia instead of the other sweetener.

                          Hi, I'm sure stevia would work just as well, however you will need to adjust the quantities accordingly as it will not be the same sweetness level.
