Keto Dark Chocolate Truffles
Truffles are one of the first things they teach students in culinary school, and for a good reason. They are simple yet delicious and elegant. These Keto dark chocolate truffles are so simple to make but have a rich texture and flavor profile. They make for the perfect Keto snack or dessert for when you are craving something decadent and sweet. They require only 4 simple ingredients to make and very little hands-on preparation and time. They are perfect for kids to enjoy and adults alike.
How do you customize this Keto truffles recipe?
The most common way to vary this Keto dark chocolate truffles recipe is by switching up the flavors. There are many flavor combinations to make when it comes to dark chocolate truffles. A few flavor combinations include chocolate and mint (simply add 1/8 tsp. of pure peppermint extract to the melted chocolate), coconut (coat the truffles in shredded coconut), Orange (add orange zest to the melted chocolate), and espresso (stir in a teaspoon of espresso powder in the chocolate and cream mixture).
How to make these Keto dark chocolate truffles?
These Keto dark chocolate truffles are very easy to make. Start by chopping the dark chocolate and heating the heavy cream. Then melt the chocolate and heavy cream to create a smooth mixture and refrigerate until the mixture is firm enough to scoop. Scoop the mixture and roll to form round balls using the palms of your hands. Finally, coat in cocoa powder and refrigerate one last time to firm up and serve.
How to store these Keto truffles?
These Keto dark chocolate bites are great to hand on hand as a snack or even dessert for unexpected guests. We recommend making a sizeable batch and storing them for when the need comes. To store, place the truffles in an airtight container lined with parchment paper or lightly dusted with cocoa powder and store in the refrigerator for about 2 weeks and in the freezer for 1 month.

6-½ ounce
Recipe Steps

Step 1
To a saucepan over medium heat, add the heavy cream and heat it until it is very hot but not scalding. Meanwhile, chop the dark chocolate into small pieces. If you buy a dark chocolate bar that is on the thinner side, it makes it easy to chop.Step 2
Place the chopped chocolate in a heat-proof bowl and pour the heavy cream over it. Cover the bowl with plastic wrap and let it sit for about 3 minutes until the chocolate is melted. Unwrap the bowl and stir the chocolate using a spatula then add in the vanilla extract.Step 3
Transfer the bowl to the refrigerator and let the chocolate chill for about 1 hour until the mixture is firm yet smooth enough to be scooped. Scoop the chocolate using a teaspoon and roll each dollop between the palms of your hand to form round balls. Ensure to work fast since rolling can warm up the chocolate making it difficult to shape.Step 4
Lightly coat the truffle balls in cocoa powder and roll them one last time to ensure an even shape. Line the shaped truffles on a plate or tray and transfer them to the refrigerator to allow them to firm up. Keep the truffles chilled until they are firm enough to be enjoyed.

Sorry but I just confirm is the serving 1 or 20 truffles? How many carbs and net carbs does 1 truffle have in? I know the recipe makes 20 but wasn’t sure if your ‘serving’ was for the recipe or the the truffle as it say ‘truffles’ plural in the serving amount

Does it need to be stored in the freezer always? or just can keep in the fridge?

Best to store in the freezer and maybe just a few in the fridge at a time. I made another chocolate truffle recipe and left them in the fridge and they went bad and I had to throw out so many!

Also eat straight from the freezer really lovely.

How many ounces of chocolate?
recipewriter 6 years ago
It's 6.5 oz of chocolate. I will adjust the recipe to be clearer for others. Thank you so much!

You don’t list the cocoa powder in the ingredients. By any chance have you left sweetener out of the recipe as well? The recipe sounds good but I don’t want to try it if there should be sweetener in it.
recipewriter 6 years ago
No, there is no sweetener in this recipe as there is some sweetness to the chocolate itself. Feel free to add a few drops of liquid sweetener to the melted chocolate if you'd like. I would say about 4-5 drops.

Easy, very rich and pretty yummy

Have you ever tried adding a tbsp of mct oil? Wondering if that would make it too runny...🤔

I think that would be a great addition. There is enough chocolate and cream in this 1 T should be ok. If not use 1/2 T.
