  • Step 1

    Preheat an oven to 375 F. Line a sheet tray with parchment paper or a silicone mat. Whisk the eggs, coconut oil, coconut milk, and kosher salt together. Make sure you use solid coconut oil not melted.

    Add in the baking powder, almond flour, and Swerve.

    Fold in the cheese and bacon. Mix until combined. The texture should be thick enough to scoop, drop on a sheet tray and hold its shape.

    Using a 1 oz cookie scoop, scoop out 12 heaping scoops at least 1 ½” part. This should yield 15 biscuits. Make sure they are round on top because they will not rise in the oven.

    Bake for 15 minutes until the tops are starting to turn brown on the edges and the biscuits are set. Allow to cool on the sheet tray until cool enough to handle.

    Okay I just made these just like the recipe, did not variate it except for the servings. Using my little cookie scoop I got 22 biscuits. That's fine with me, lowers the carbs and allows me to feel like I'm eating a little bit more if I have more than one. I do like them at least warm, they're nice and soft I don't know what they'll be when they cool off or from the refrigerator if I need to warm them back up, but I do think I might just add a tad more swerve to mine next time. I have a little sweet tooth. I'm also not a big fan of almond flour so I know I use it quite a bit cuz that's what's used in keto cooking, but I have used a blend from Walmart's made for ketos and I think I'll try that next time. Still I thought they were pretty darn good.

          Put your liquid coconut oil in the fridge. It will turn solid

            Macro check: this recipe actually makes 30 one oz scoops, double what it says it will. so is one serving actually 2 one oz scoops?
