  • Step 1

    Preheat an oven to 350 F. Spray a 9” cake pan very well with cooking spray. Add the coconut flour, almond flour, baking soda, kosher salt, and ¾ cup Swerve to a medium sized mixing bowl. Whisk to combine.

    Add the canned coconut milk, vanilla, and 4 eggs to a bowl. Whisk together to combine. The batter will be nice and thick.

    Add and gently fold in the blueberries.

    Crush the walnuts and add the 1 ½ T coconut oil, 2 T Swerve, 1 t cinnamon and a pinch of salt. Combine together until crumbly.

    Spread ½ of the batter into the cake pan.

    Top with ⅓ of the walnut mixture.

    Top with the rest of the batter and the rest of the walnut mixture.

    Bake for 35 minutes. The cake will still be wiggly in the center, so turn off the oven and allow the cake to continue cooking for 5-7 minutes in the oven.

      Unfortunately this is the problem I have with this app...it's all American based ingredients & recipes. I wish there was an European version as this is too heavily US based and our ingredients are so different because our net carbs are already done in our country's packaging. It's a shame because there are some nice recipes in this app.

      Maybe you are from another country? In the US, coffee cake refers to a sweet cake with a crumble on top that tastes good with coffee. It rarely, if ever, has coffee flavor.

    I used fresh blueberries, much better than frozen. Also, used normal milk. Very yumm.

      I didn’t have any coconut milk so I used some sour cream and almond milk and I used pecans and Walnuts.So good and will be making it more often :)

      I don’t like blueberries so I left them out but instead I put in a couple handfuls of unsweetened coconut shredded. I didn’t have walnuts so I use pecans this was delicious. I’m glad to have another option other than bacon and eggs every morning

            Can you substitute almond milk for coconut milk?

              I did! I just made it and didn’t have coconut milk so I used almond milk. The only thing is that the “batter” was runny. Not sure if it was because of the substitute of the almond milk or not but I added about 1/2 cup more almond flour and it turned out great!

                I made these into 24 muffins. I did 12 chocolate chip and the other 12 blueberry and Walnut. . They all turned out amazing. Thank you.
