Things to smear on your biscuit

If a smear of butter is too plain for you, try smearing a nut butter or sugar-free jam on your mug biscuit. Peanut butter, almond butter, or ground cashews can all be spread on the mug biscuit. If you want to use a jam, opt for strawberry or blueberry jam for the least amount of carbs.

What is ‘sugar-free’?

You can’t have just any ‘sugar-free’ item on the shelves when on the Keto diet. Some sugar alternatives still trigger an insulin response in the body, which can potentially lead to health problems like diabetes. Look for sugar-free foods made with stevia, which can be consumed on the Keto diet.

Coconut flour alternatives

  • Avocado oil

    Avocado oil

Recipe Steps

  • Step 1

    Combine all of the dry ingredients together. You can combine them in your mug right away or mix them first in a separate mixing bowl. Add in an egg and avocado oil, then stir the ingredients to combine.

    Microwave your mug on high heat for 1 minute. You’ll know the mug biscuit is done when it looks puffed up and slightly darker around the edges. You can gently press down on the biscuit and feel that it’s done as well.

    If you need to microwave the mug biscuit for longer, then do so. Once it cools for a minute, you can slip it out of the mug and slice. Smear a pat of butter on the mug biscuit as a Keto-friendly topping.

        Those would be good alternatives, might give a different taste though. I wonder if butter or Ghee would work in place of the oil?

      Mine wasn’t dry at all. I think it depends on the size mug you use and the wattage of your microwave (overcooking). I had it with the spinach egg and had a very tasty breakfast.

        Pretty good. I'd say it's a good *base* to customize with flavour. Made "as is" I found it kind of bland tbh so I omitted the sugar and instead added a bit of shredded cheese and Italian seasoning, it needs *more* flavour still, definitely will add a few more seasonings next time. Maybe some Everything bagel seasoning as some suggested and garlic salt, thyme, grated cheese, parsley.. so many possibilities really. For a sweeter bun I'd try brown sugar (swerve) cinnamon, apple pie or pumpkin pie spice, melted butter instead of oil..ah yes the possibilities are endless! After nuking it for 1:30, it came out done and wow it's huge! lol. Easily cut in 2 for a generous breakfast sandwich. I topped it with a bit more shredded cheese and put it in the air fryer for just a few minutes to melt the cheese and crisp it up a bit. It looked amazing but I'm still going to be playing around with seasonings to find that perfect sweet spot. ;)

          So delicious while so easy and quickly made. I love this recipe. Now one of my favorite breakfast. Mine was not dry at all, because, accidently I used finely ground almonds instead of almond flour. I think that makes all the difference. Almond flour is deoiled, where ground almonds are not. It works great but is juicier.

              Not bad at all. I didn’t add the sweetener, but added grated cheese, mustard powder. garlic powder & a dash of chipotle powder, Nuked it for 1:30mins, took it out of the mug & threw it in the air fryer for a couple of minutes to crisp it up. I could still taste the coconut powder, so I think I’ll leave it out next time. Quite acceptable though, considering I hadn’t had anything like that for months. I love cheese scones, so these will work as a replacement. 🥳🥰

                As a general rule of thumb, cooking in a microwave oven reduces cooking time by 1/4th of a conventional oven. Comparable heat is 375 degrees Fahrenheit or 190 degrees Celsius. For this recipe preheat your oven/air fryer to 375 and set cook time for 4 minutes. Test for doneness and adjust cook time accordingly.

                  I agree, I won't use a microwave. I wonder if it is good with ground sunflower seeds instead of almond flour. I will experiment 😊

                  Hi Fabulous, I did a little research on converting microwave cooking instructions to conventional oven or air fryer temperature and approximate cooking times. See my comment and enjoy. Don’t feel alone in wanting to avoid microwaved foods. Basic conversion rule 375 degrees and multiply microwave time by 4. Microwave time. Conventional time 1 minute. 4 minutes 2 minutes 8 minutes 3 minutes. 12 minutes 5 minutes. 20 minutes If your oven is set for Celsius, your cooking temperature is 190C.

                If you live at altitude, be sure your mug is large enough. I used a standard 10oz size, and the biscuit threatened to punch through the top of the microwave. I popped the split biscuit under the broiler for a minute or so, and that crisped it nicely. Large smear of Irish butter, and I had a tasty breakfast. Oh, and a biscuit with sugar (!!!!!) is a scone. I married a Southern boy. No sugar in the biscuits or the cornbread! Sugar goes in the ice tea.

                Much prefer without the coconut flour. It is quite noticeable in the texture. I love coconut but not in my biscuits.

                    I just made this! I didn’t have Avacado oil so I substituted an herb infused olive oil which gave it an Italian bread taste. I’m going to be making this often! Someone give me a keto gravy so I can have biscuits and gravy 😭😭

                      Take 1 1/2 cups of heavy cream and heat it. Stir in 8 oz of cream cheese. Season with 1/2 tsp of garlic and onion powder and salt and pepper to taste. Very rich and delicious.
