100% Pure Erythritol by Now
2 tablespoon
Desiccated Unsweetened Coconut by Compass
2 tbsp
Reduced Sugar Craisin Dried Cranberries by Ocean Spray
1 tablespoon
Coconut Oil
¼ cup
Almond Butter, Unsalted
½ cup
Food Cupboard Home Baking Almonds Ground by Sainsbury's
2 ounce
Desiccated Unsweetened Coconut by Compass

Recipe Steps

Step 1
Add the almond butter, ground almonds, coconut oil, ½ cup of desiccated coconut and the erythritol to a food processor, and blend well to combine.Step 2
Transfer the mixture to a bowl. Finely chop the cranberries and add to the mixture. Stir well to combine.Step 3
Transfer the mixture to the fridge for 30 minutes to firm. Remove the mixture from the fridge and divide and roll into 15 even balls.Step 4
Dust the balls with the remaining desiccated coconut to serve. Keep chilled.

Could you please tell me the macros (particularly the carbs) if you don’t use the cranberries but substitute adding one almond inside? I’m hoping they may taste like Rafaellos. Thx!

I absolutely love these. I struggle to not eat half of them in one hit. They don't travel well in summertime (still delicious if melted) but I've found they keep their shape if its cool enough

Can almond flour be substituted for ground almonds?

Hi, I'm sure this would be fine. If the mixture is a little too wet you may need to add a little more flour. Hope this helps.
