Keto Air Fryer Scotch Eggs
Scotch eggs are one of the best air fryer Keto recipes! This recipe is very close to the traditional style. All that’s really different is the breading, but some would argue a Keto pork rind breading would make a scotch egg taste even better. You may find using an air fryer to be also far easier than frying or baking the eggs. While a little bit of gentle handling is needed throughout this recipe, there’s nothing that can’t be broken down step-by-step. Slow and steady wins the race! If you cannot find ground breakfast sausage in your grocery store, plain ground pork is an acceptable substitute. At your discretion, you may wish to add more seasonings to taste to plain ground pork.

They are typically then deep-fried. Most would enjoy a scotch egg as part of their breakfast, but they also make a great, filling snack. In fact, they’re even delicious hot or cold. Some shy away at the thought of preparing scotch eggs because they can be a little tricky. Between peeling soft-boiled eggs and gently wrapping multiple layers around them, there are many chances for too firm a grip to make a mess. Step 1
Make soft-boiled eggs by placing the eggs in the base of a pot and fill with water until the eggs are just covered. Bring the pot to a boil. Then, remove from the heat and let the eggs sit covered in the water for 3 minutes. Transfer the eggs to an ice bath to cool down. Once cooled, peel the shells away from the eggs. If some of the egg breaks off with the shell, don’t worry. Any mistakes will be covered up in the next step.Step 2
In a bowl, mix together the ground sausage with pepper, paprika, garlic powder, and onion powder. Break the sausage into 2oz portions. One at a time, flatten a portion of sausage, place an egg in the center, and wrap the meat around the egg. Repeat until all eggs are wrapped in sausage.Step 3
Preheat an air fryer to 350 degrees. In a new bowl, arrange heavy cream. You may need to add extra cream to the bowl to help coat your scotch eggs. On a plate, arrange the almond flour and pork rinds into a breading mixture. One by one, roll a scotch egg in the breading, drench it in cream, let the excess cream drip off, then roll a second time in the breading. Set each breaded scotch egg on an air fryer tray lined with parchment paper.Step 4
Bake the scotch eggs for 18 minutes. You can rotate the eggs halfway through if you feel the need, but this is not necessary. Allow the eggs to cool for 5 minutes before slicing into.

I followed the recipe - but used sausage instead of ground pork. Omitted the salt and pepper. I had to air fry 7 minutes more since the breading was still wet. Next time I will use egg with the cream. I loved this recipe. Great flavor! My husband (non keto) loved these.

Another variation - add some chopped cooked bacon, or grated cheese, to the sausage mix. At this time of year, I also add a few chopped up cranberries and extra sage/onion t o create a Christmas feel to the egg.

Love Scotch eggs. Here’s a tip for peeling eggs easily. Bring water to a full boil then insert eggs into pot gently. I use a slotted spoon. Cook. Peeling will be so much Easier. 👍

Also, it helps to add a splash or two of vinegar to the boiling water, for hard boiled eggs. 1st reason -- helps loosen the membrane off the shell & inner egg 2nd reason -- helps if egg is accidently broken, to seal the egg w/o having it leak massively

I use this method also, but I would like to add that when peeling the egg hold it under running water. The water will help lift the shell off the egg.

Can I substitute coconut flour for almond? I am allergic to nuts and a lot of recipes just don’t work without the almond flour.

I’ve found through other recipes that unflavored whey protein powder makes the most “traditional” style breading! Just season it like normal and it’s amazing!

Been making scotch eggs for years. You can bake them without an air fryer, but happy to see this recipe! My go-to for morning grab and go. If baking: 350 for about 30 mins and then crank to 425-450 for 15 mins to get crispy. I also like to do variations. Instead of breakfast sausage, combine 1/2 ground pork with chorizo for a spicer version. If you prefer ground turkey, add one raw egg with the ground turkey to get the right stickiness. I usually do 5 eggs to 1 lb of sausage or ground pork. I made 6 eggs work per lb but they need to be medium sized eggs.

love scotch eggs and these taste amazing! did soft boiled eggs and ate them warm and tasted even better the next day. i didnt use the heavy cream as a wash i addded a extra egg to mix

I really want to love these, but there wasn’t enough meat to go around the eggs. I would advise using at least 2 1/2 ounces for each egg. Followed the directions exactly, but one of four eggs lost its coating during cooking. This recipe needs a bit of reworking!
