These curried cauliflower skewers are loaded with aromatic herbs and spices and oven baked until tender and golden.

Ingredients
Cauliflower
1 small - head - 4" diameter
Tomato Puree
1 tablespoon
Curry Powder
1 teaspoon
Cumin, Ground
1 teaspoon
Spices Coriander Seed Or Ground
1 tsp
Lemon Juice
1 teaspoon
Olive Oil
1 tablespoon
Turmeric, Ground
¼ teaspoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Cover four wooden kebab skewers with water to soak.Step 2
Cut the cauliflower into florets and add to a pan of boiling water. Boil for 3 minutes until just tender, drain and submerge immediately in ice cold water to stop the cooking process. Drain, pat dry and add to a mixing bowl.Step 3
Preheat the oven to 400 degrees Fahrenheit.Step 4
Add the tomato purée, oil, curry powder, cumin, coriander, lemon juice, turmeric, salt and pepper to a mixing bowl. Mix together well to combine.Step 5
Add the tomato mixture to the cauliflower. Use your hands to rub the marinade all over the cauliflower.Step 6
Divide the cauliflower evenly between the four kebab skewers.Step 7
Bake for 20-25 minutes until fork tender and the edges are starting to caramelize.
