    ½ cup, grated

  • Step 1

    Roughly dice the bacon. Heat the oil in a skillet over a medium heat and add the bacon, cooking until crisp and golden. Remove from the pan with a slotted spoon and set aside.

    Dice the zucchini into 1/4 inch chunks, slice the scallions and crush the garlic. Add to the pan with the bacon fat and cook gently for a few minutes until tender and fragrant.

    Add the cauliflower rice to the pan along with a tablespoon of water. Season with salt and pepper and stir everything well to combine. Cook for 2-3 minutes until the cauliflower is hot through.

    Scatter the grated cheese over the rice to melt.

    Remove from the heat and scatter over the diced bacon and freshly chopped parsley to serve.

            I didn't use any olive oil and drained most of the bacon grease and it was still greasy enough but tasty!

              Great little dish! Added chicken for a dinner portion. A little too much grease left for me so I strained most of it out.
