  • Cauliflower, Raw

  • Italian Seasoning

    ⅓ cup, shredded

  • Cheddar Cheese

    Cheddar Cheese

    ½ cup, shredded

  • Mozzarella Cheese

    Mozzarella Cheese

    ¼ cup, shredded

  • Step 1

    Chop a head of cauliflower into florets and toss them in a food processor. Blend until you have very, very fine cauliflower rice.

    Place the cauliflower rice in a microwave safe bowl and microwave the cauliflower or 1 ½ - 2 minutes. Let the cauliflower cool until it’s easy to handle.
  • Step 3

    At this point, preheat an oven to 450 degrees and line a quarter sheet pan with parchment paper. Place the cauliflower rice in a cheese cloth or thin dish towel and squeeze as much liquid as possible out of the cauliflower. Return the liquid-free cauliflower rice to a mixing bowl.

    Stir the salt, garlic powder, italian seasoning, egg, and parmesan cheese into the cauliflower. Then, press the mixture into the prepped sheet tray. Make sure the mixture fills all four corners of the tray and press it down.

    Bake the tray for 12 minutes. Then, sprinkle the cheddar and mozzarella cheese over the top of the cauliflower (covering all edges).

    Bake for an additional 5 minutes. Allow the garlic bread to cool slightly before slicing it into 12 rectangular pieces.

    I put a little salt in the cauliflower and let it set for 30 min before microwave. For baking I did 460 F and 32 minutes. Basically cooked until my finger would not make an indent. I live in higher altitude. The texture is not crispy, but not mushy like others have said. The texture turned out more like a pizza. I added paprika for a little kick. I like it and will make again with other spices.

          Followed recipe to a t but it turned out too mushy. Didn’t crunch up at all!! Won’t make again 😩

              Delicious!!! Everyone in the house loves them. I used frozen cauliflower, roasted it, puréed it, then drained it. I also used fresh and grated Parmesan.

                Did not crisp up at all (and I wrung out lots of water). No way the amount of cheese in the recipe would cover the whole crust. I increased the amount and there were still lots of bare spots. I amped up the seasonings so the flavour was good.

                      What is a quarter sheet pan? I tried to make it and it was mushy. Thinking maybe I used the wrong size.

                        Try salting the cauliflower rice a little bit, let it sit for about 30 minutes and then squeezing out the moisture before using it in the recipe

                        A quarter sheet pan is a standard 9x13 pan. If your cauliflower is mushy, bake for longer until the moisture has evaporated before adding cheese on top.

                          Love this and I am generous with the garlic salt and herbs and also add ground cumin and a little chilli for a bit more flavour. Great for my packed lunch for work. Def a go to recipe for me.

                              Loved this garlic bread!! My son, who is a picky eater, loved them too. My husband who isn't on Keto loved them. The key is to get all the liquid out you can and spread it thin on the pan sheet. I used frozen rice cauliflower from Costco. It worked perfectly with 2 bags. It's definitely going to be a good go to from now on and it's pretty easy to make. I think next time I will add a little fresh garlic to make it pop even more.

                                      I don't have one either so I ended up steaming the cauliflower and mashing it. First I drained it in a colander and then pressed it out with a kitchen towel. It worked out really well.
