This quick and easy Keto Thanksgiving recipe makes a flavorful side with minimal fuss.
Can I Make This Dairy-Free?
We have used butter in our low carb Thanksgiving recipe, to add to the flavor of the dish and provide richness to the pan juices for serving. If you are on a dairy-free or vegan diet, you may sub the butter for olive oil or coconut oil. You could even use a tablespoon of each if desired. Please be sure to adjust your macros to account for any changes made to the original recipe.

Mushrooms

Unsalted Butter
2 tablespoon
Rosemary, Fresh
2 teaspoon
Orange Juice
1 tablespoon
Garlic
1 clove
Reduced Sugar Craisin Dried Cranberries by Ocean Spray

Salt, Sea Salt

Step 1
Melt a tablespoon of butter in a skillet. Thickly slice the mushrooms. Add the sliced mushrooms to the skillet with the melted butter. Cook the mushrooms for 3-4 minutes until browned all over.Step 2
Thinly slice the garlic, finely chop the rosemary and roughly chop the cranberries. Add the orange juice, garlic, cranberries, rosemary and salt to the skillet. Add the remaining tablespoon of butter and stir well to combine.Step 3
Saute the mushrooms in the butter with the other ingredients for a further 2-3 minutes. Cook until the mushrooms and garlic are tender and fragrant, and the cranberries are plump. Serve hot and drizzle over the buttery pan juices.
