Ingredients
Radish, Raw
2-½ ounce
Olive Oil
2 tablespoon
Cauliflower Rice
2 cup
Curry Powder
1 teaspoon
Raw Egg
1 medium
Parsley, Fresh
1 tablespoon
Garlic
1 clove
White Onion
½ small
Cumin, Ground
½ teaspoon
Ground Coriander
½ teaspoon
Salt, Sea Salt
¼ teaspoon
Black Pepper, Ground
⅛ teaspoon

Step 1
Heat a tablespoon of olive oil in a skillet over a low/medium heat. Mince the garlic and thinly slice the radish into matchstick size strips. Add the pan and cook gently until tender.Step 2
Add the remaining oil and ground spices.Step 3
Add the cauliflower rice, season and stir well to combine. Cook over a medium heat for a minute or so, until the cauliflower is tender.Step 4
Make a well in the center of the skillet. Beat the egg and pour into the center. Allow the egg to begin cooking for a moment then scramble into the rice, mixing everything together. Continue to cook until the egg is cooked to preference.Step 5
Scatter with fresh parsley to serve.

Excellent ! The spices were perfect. Adjustment: I made it with hearts of palm rice, instead of cauliflower rice, and 2 eggs.
