Keto “Apple” Cobbler For Two
It is amazing how much chayote has the texture of apple in this dessert and it is so good even though you’re technically eating a vegetable! The warm apple pie spices make this dessert so delicious and comforting and it is just like the real thing. Maybe even better!

Almond Flour by Sunblest
⅓ cup
Coconut Flour by Nutiva
1 tbsp
Organic Stevia Blend by Pyure
1 tsp
Cinnamon
¼ tsp
Kosher Salt
⅛ teaspoon
Butter
2 tablespoon
Chayote Fruit Raw
1-¼ cup
Organic Stevia Blend by Pyure
1 tsp
Cinnamon
¼ tsp
Spices Allspice Ground

Lemon Juice Raw

Recipe Steps

Step 1
Preheat an oven to 350 F. Combine almond flour, coconut flour, Pyure, cinnamon, kosher salt and 2 T diced butter in a small bowl. Using your fingers, work butter into the flour so it is combined yet still has small lumps of butter in it.Step 2
Peel, core and dice chayote into ¼” cubes.Step 3
Toss it with 2 T Pyure, cinnamon, allspice and lemon juice.Step 4
Take two small ramekins and divide the chayote between the two bowls. Then follow with dividing the crumb topping.Step 5
Bake for 30-35 minutes until the top is browned.Step 6
Served with whipped cream!

Goodness! I would never think that my chayotes that I put in my chicken soup can turn into apple 🍏 pie yummy 😋 I have to try this, and for people that doesn't know where to find them, usually Hispanic stores carries them as we use them m and cook with them, enjoy!

I make this often to take to pot lucks so I can enjoy dessert with a group of people. It is very good. I add (if I have it) Walden Farm's Apple Butter(0 carbs) for flavor. Great for holiday desserts too.

Made this with zucchini as we can’t get chayote here and it turned out really good. Left skin on and put on paper towel after dicing to pull moisture out. I also added a couple of Tblsps of chopped pecans to topping which gave a bit more crunch. Nice sub for apple pie

Really liked this (so did my husband). The second time I modified - for the chayote mixture, I did 1/4” cubes, sautéed with butter & spices until butter absorbed /smelled right. Chayote was still crunchy. I added about 1/3-1/2c water, reduced heat and simmered until water absorbed. Still pretty crunchy, so I added a bit more water. Really helped & very flavorful. Did about 1T stevia. Filled the ramekins with mixture, did rest as instructed. Next time I’ll use a flatter, wider dish /ramekin so more of the topping crisps up.

My husband thinks it’s delicious. Texture was good too. I followed directions exactly and .5”cubed the chayote. Just left out coconut flour. The whipped cream moistened the warm topping that wasn’t quite carmelized after 35 minutes in oven. Thank you for a tasty tradition!

What is chayotes? Where can you find it? Can you used frozen slice apples?

The chayote squash is also referred to as mirliton or choko squash. I also slice and eat them raw sprinkled with Tajin. The texture is closely related to a crisp apple. And you can eat skin, fruit, and seed. I think they may be cheaper carb-wise compared to zucchini. Enjoy! 🙏😎🖖

Zucchini squash is a replacement for the Chayotes. We don't have it here that I could find. Went on-line for a replacement and found Zucchini. I have made this several times and it works great with the Zucchini and it reduces the carb count 4.3.

I followed recipe but chayote was not cooked through. I think this needs an extra step. I recommend boiling the chayote before mixing it with spices.

This recipe is DELICIOUS!!!!!! I made this recipe twice and plan to do it again. My boyfriend loves it. Especially served with the whip cream :)) Next time though I will boil the chayotes before hand. I also let it bake for an extra 5 minutes. Thank you so very for this recipes !!

Hubby is highly impressed and wanted more. He loves apple pie. I was slightly disappointed the crumble was so dry and powdery. More butter made a batter. I'll keep experimenting. I boiled the chayote 15 minutes for a softer texture, closer to an apple pie, and added juices cuz it was also a bit dry. Delicious!

I believe you could substitute zucchini for chaiote also. Add a dash of lemon juice for tartness. I will try it to today and report back.

Sure! Give it a try! Zuchinni releases a lot of water vs. chayote so keep an eye out for that.

Yes, you absolutely could! Rhubarb and chayote have the same carb count. Just take note, you will need to add more sweetener since rhubarb is tart!
