Low Carb Peanut Butter Bacon Cookies
Everything is better with bacon! These yummy cookies are easy to make and very satisfying. Use your favorite granulated sugar substitute. I recommend one that’s a blend of a few different types to get a better texture. Since the cookies are already brown from the peanut butter, you won’t notice a Lot of browning while the cookies are baking, but 12-14 minutes in the oven is the perfect time to firm them up. As much as you’ll want to eat them right when they come out of the oven, hang tight as they cool off and firm up.

Peanut Butter, Salted

Granular Sugar Replacement by Swerve
¼ cup
Baking Soda
½ teaspoon
Applewood Smoked Uncured Bacon by Niman Ranch

Step 1
Roast bacon slices at 350 degrees for about 30 minutes, or until crispy. Remove from the oven and roughly shop the slices. Set aside and reduce the oven temperature to 325 degrees.Step 2
Pour ½ cup of creamy peanut butter in a mixing bowl.Step 3
Add the sweetener, egg, and baking soda to the bowl and mix together. Fold in the chopped bacon.Step 4
Form into 10 balls and place them on a parchment covered baking sheet. Slightly flatten each of the balls.Step 5
Place the sheet in the oven and bake for 12-14 minutes. Remove the cookies from the oven and allow to cool for 20 minutes before enjoying.

I have been making PB & bacon cookies for a few years. If you like sweet, salty, smoky & spicy then add a pinch of Aleppo pepper - excellent!

Added 1 serving Lilly’s milk chocolate chips. No bacon. Reminded me of Cocoa Wheats flavor which I liked.

These are sooooo good. I kept them in the refrigerator (yuck!), so I decided to reheat them in the air fryer. They tasted fresh out of the oven all week!!!!

I doubled the recipe and made them without bacon but added about 1/4 cup of almond flour for a better consistency, a little vanilla and a tablespoon more of Swerve, and added a pinch of course salt over all. It was fantastic and soft in the middle.

Very good. I made it with crunchy PB, and also added cinnamon and desiccated coconut👌👌. PS: no bacon.

I can only give this recipe 3 stars because I'm very confused by the bacon... To me it doesn't belong. I like the flavor of the cookie but next time I won't add the bacon. The bacon adds a very weird texture to the cookies.

I made these this morning using Swerve and they were not super sweet. I am making these for a cookie swap with non keto folks so I might sub some of the swerve for stevia on my next batch to get it sweeter. It’s an easy recipe and I would give it a try with stevia

You can try stevia, but will want to start out with less since stevia is typically more sweet. Due to using less sweetener, the consistency of these cookies may also be a little different. Let us know if you try it!

We have a Bake Sale today raise funds for Houston Sheltie Sanctuary. Made theses to take.. I couldn’t stop testing the dough. LOL It remolimded me of the Girl Scout Peanut Butter Cookoes.

Exactly how do you "pour" peanut butter? From the picture, it looks as if it has been melted first. Is that right? If so, how to go about melting it? Thanks.

Hi, natural peanut butter was used for this recipe, and it's fairly pourable on it's own. You can use whatever PB you have on hand, but many of them have added oils so the texture of the cookies may vary slighty.

Natural peanut butter without all the sugar and extras is quite pourable but obviously you can’t pour jiff, skippy, etc. I use crazy richards natural peanut butter. It is pourable.
